American Flatbread - Managing Partner’s Job Description

The Managing Partner is responsible for running the entire American Flatbread restaurant by overseeing all activities that take place within the building. The ideal candidate will approach this challenge with the mentality of an owner, and not simply as a manager.

The Managing Partner is responsible to oversee all personnel and will be given the autonomy to act on many of the decisions involved in this area. Summarily, this includes
(but isn’t limited to) the hiring process, training and testing, evaluations, promotions, wage adjustments, benefit enrollment, and terminations.

The managing partner is also responsible for meeting and maintaining the AF service procedures and standards which is critical role for the Managing Partner.

Overseeing all food production/quality is also a responsibility of this position. While the
Kitchen Manager has significant oversight in this area, the ultimate responsibility falls upon the Managing Partner to ensure quality and efficiency in this area.

Oversee All Personnel

  • Establish and maintain the AF culture within the entire workplace
  • Effectively recruit and interview (initial) all potential employees
  • Directly involve yourself with every hiring decision
  • Execute proper hiring procedures as dictated by AF policy
  • Personally execute all initial employee orientations
  • Ensure the use of all AF training and testing programs and assure that all employees comply 100% as they are trained
  • Personally review the training progress of each employee and graduate each employee only after they have demonstrated a proficient knowledge of the expectations and duties required by their job
  • Conduct established periodic evaluations of all employees
  • Effectively communicate with employees with regard to their performance, using the AF daily coaching, performance evaluations and the daily huddle.
  • Develop and maintain an open, friendly and productive relationship between the kitchen and the service staff.
  • Constantly emphasize the importance of the guests (J & J Treatment) in the AF model and make sure that the kitchen staff acts accordingly as they are in full view of the guests at all times

Meet and Maintain the AF Service Standards

  • Be proficient in each service position (host, server, bartender & busser) in the restaurant and fully understand each role. Also understand the expectation, and the necessary procedures as outlined by the AF training program, mystery shopper program, and employee evaluation criteria
  • Establish and maintain the AF service approach (J & J) within the entire workplace
  • Hold daily huddles prior to each service shift to discuss goals, issues and service requirements with employees directly
  • Follow up daily with individual employees to provide feedback on service timing, sales productivity and other achievements or improvements that need to be recognized
  • Ensure that all service employees are knowledgeable with all food and beverage items offered at AF and can positively and confidently present the information to the guests
  • Ensure that all service employees are knowledgeable with the service sequence used at AF and understand what direct role they play in this sequence
  • Oversee all service activities, making sure that each employee is working in the best interest of our guests by offering all options and choices in an appealing and comfortable manner
  • Oversee all guest problem resolution, ensuring that service employees are well versed at problem recognition and understand how to respond to these challenges as well. Follow up with guests on every problem that occurs in the restaurant
  • Provide 100% table touch during each shift that you are actively working. Ensure that other managers are providing the same 100% table touch on shifts that you are not covering

Oversee and Maintain the AF Food Production and Quality Standards

  • Demonstrate proficiency in all production positions with a complete understanding of the specifications for every prepped item, the correct visual presentation of each item, and the proper taste of each item offered in the restaurant
  • Responsible to oversee the Kitchen Manager and all of the duties that are part of the position. Your success in this area depends heavily on the success of the

Kitchen Manager.

  • Must check in 100% of the time on the four major food items (dressing, sausage, and sauce) to make sure that they are properly prepared
  • Stay in touch with the daily dough production and be familiar with the dough quality on a daily basis. Working with the Kitchen Manager to maintain the best dough is a primary goal
  • Maintain a visual quality check on all food items being prepared and provide effective feedback to the Kitchen Manager and employees when called for
  • Work in concert with the Kitchen Manager to continually source and use local and organic food products. Create and maintain advantageous agreements that develop long term relationships. Oversee the specifics outlined in the Kitchen

Oversee and Maintain the AF Beverage Program and Service Standards

  • Maintain a visual quality check on all beverages being prepared and provide effective feedback to the employees when appropriate
  • Oversee and manage all beverage service procedures
  • Monitor employee compliance of age-requirements for alcohol service on a daily basis
  • Monitor inventory levels and prepare and place orders in an efficient and financially responsible manner (considering cash-flow and product storage issues)

Sanitation

  • Monitor all sanitation procedures (storage, food-handling, temperature charts, cooling charts, cleaning processes/checklists, prep-items, dating, etc.) to make sure that all employees are operating in the safest manner possible
  • Oversee all facility management to make sure that the equipment and the building are all in good, clean condition at all times
  • Ensure that all employees are working in an organized, clean, safe and visually appealing manner
  • Oversee the proper storage of all food and beverage products
  • Accompany all sanitation inspection agents throughout the restaurant whenever requested and participate in the inspection.
  • Respond to all sanitation inspections by promptly providing action steps to each issue identified and following up on each action to correct all problems in a timely manner

Marketing and Community Relations

  • Schedule weekly Tuesday night benefits
  • Manage each benefit from the application process to the actual event using the timeline and requirement outlined by the benefit application packet
  • Continually be involved in the 7AOK program and record acts in the AF public calendar
  • Strive to always be recognized as Mr. or Mrs. Flatbread within the community
  • Be involved in a variety of community organizations ( i.e. chamber of commerce, school events, town sponsored festivals and events, etc.)

Administrative Responsibilities

  • Responsible to oversee all of the administrative responsibilities of the Kitchen

Manager, including but not limited to all personnel files and required documents, dough charts, cooling charts, temperature charts, cleaning checklists, prep sheets, ordering processes, daily (quick count) and monthly inventories, schedules, and employee evaluations.

  • Directly execute all sales and payroll budgeting
  • Create all FOH scheduling within the forecasted guidelines you have established
  • Carryout and follow-up on all opening and closing checklists, as well as cleaning checklists
  • Create, audit and transmit all payroll information as required by the established

AF payroll processing procedures

  • Monitor payroll expenses on a daily basis and provide goals, up-to-date conditions and management strategies to the other managers in a timely manner
  • Oversee beverage control measures on a daily, weekly and monthly basis
  • Promptly respond to all outside requests for administrative information (credit card, government agency, bank information, accounts receivable and payable, human resource, etc.)
  • Oversee and maintain proper short and long term storage (as designated by AF procedures) of all financial records
  • Maintain organized and complete personnel files that include all required and related documents for each and every employee.
  • Maintain Payroll and POS employee data bases, updating employment status on a regular basis
  • File and maintain thorough incident and accident reports as they relate to employees and guests alike. Notify insurance companies and the corporate office of any and all incidents and follow up on all issues properly and in a timely manner

Communication & Culture

  • Create and cultivate a working environment that is fun, productive and professional
  • Create and maintain an environment of positive, open, and effective communication between all managers and employees
  • Create and maintain the AF culture with an emphasis on always making sure that employees can find enjoyment in their work
  • Reinforce good efforts, and work with positive recognition
  • Provide timely and effective feedback to managers and employees when problems arise, or improvements are needed (daily coaching)
  • Have an open mind and represent a genuine concern for all employees. Be willing and available to listen to any and all employee concerns, problems or suggestions
  • Lead by example at all times
  • Hold frequent and regularly scheduled weekly meeting with all managers
  • Prepare and participate in a weekly operations/sr. manager meeting, providing information, suggestions and feedback to the various programs being discussed
  • Foster an environment for a positive Flatbread Experience for the restaurant guests. This will include, but not be limited to: Making sure that each member of the staff has a friendly, positive attitude when they are working in the restaurant.

Making sure that the staff follows the AF Brighton company handbook. Keeping the restaurant properly appointed with artwork, plants, flowers and other approved objects that help make AFa unique place to dine.

To Sum Things Up!

You are responsible for everything that the restaurant produces – you own it. You must be constantly checking on your staff’s performance in real time. Checking the bottom of the flatbreads, asking a baker how the oven is, checking topping amounts done by the assembler, looking at the preparation and presentation of a salad or dessert, the server’s presentation at a table, the hosts’ actions and demeanor while greeting and seating, the bartender’s attitude and beverage presentation… the list goes on. The most important goal… all guests must feel that their experience at Flatbread exceeds their expectations.
