ABOUT CATCH-A-FIRE PIZZA LEBANON
Our new Lebanon location features a large taproom, dining room, patio, private party room and has a casual, fun vibe! The menu offers a variety of wood-fired items including appetizers and wood-fired pizzas, as well as sandwiches, entrées, signature salads and house desserts, all featuring Italian-American flavors. We are a craft restaurant, making all of our dough and sauces in house and sourcing the best local ingredients.

POSITION SUMMARY
The Head Chef is responsible for leading the BOH team and managing the kitchen. The Head Chef is also responsible for creating menus including seasonal, feature and pairing menus. This person will train the BOH team, provide quality control measures, inventory controls, control COGs and labor costs, and uphold excellent kitchen organization and sanitation. This is a salaried position with full time hours and requires working evenings and weekends.
Qualifications
Required:
- 5 years in Kitchen Management
- Strong, creative culinary background
- ServSafe Certification (can complete upon hire)
- Excellent communication skills and a track record of being a team leader
- Maintain a positive attitude at all times
- Demonstrate the ability to read/scale recipes and create them as needed; adept in following directions, providing direction & adhering to recipes
- Successful in creating, costing & executing menus and features
- Must be able to thrive and excel in a fast-paced environment and consistently uphold very high standards
- Able to work long hours, nights, weekends, holidays
Preferred:
- 2 years Head Chef
- 2-year Culinary graduate
- Wood-fired cooking experience
GENERAL RESPONSIBILITIES
- Be a Brand Ambassador! Spread the word about Catch-a-Fire and uphold our company goals and culture
- Lead all menu development including seasonal menus, special menus, beer & wine pairings
- Ensure that all correspondence with guests, team members & purveyors is handled in a professional and timely manner
- Troubleshoot when problems arise and find effective solutions
- Media promotional duties will also be required from time to time
OPERATIONS
- Facilitate and manage outstanding service by ensuring that all systems and stations are operating efficiently at all times; continually strive to find ways to improve speed and quality of service
- Set goals for maintaining exceptional cleanliness and organization; comply with all ServSafe recommendations
- Hold staff to quality control standards and goals for speed of service
- Implement proper opening/closing protocols and BOH station requirements
- Oversee maintenance of the BOH facility
- Keep an inventory of all BOH supplies and place orders; meet with purveyors as needed
FINANCIALS & ADMINISTRATIVE RESPONSIBILITIES
- Operate within set controls for COGS and labor and drive margins for profitability
- Analyze sales & menu mix reports to inform decisions
- Manage guest feedback using the following:
- Review ratings (Yelp, Google, loyalty program)
- Guest feedback summaries ( surveys, Secret Shoppers)
TEAM DEVELOPMENT & MANAGEMENT
- Assist in recruiting, interviewing, hiring and training new team members.
- Manage the BOH team (cooks, prep, dish) effectively and in alignment with Catch-a-Fire’s company goals and culture
- Create weekly schedule for all BOH staff
- Ensure that all employees are properly trained in kitchen organization, cleanliness, production, recipes, quality control and speed of service; regularly conduct staff training sessions to keep the team updated and functioning at a high level
- Set the tone for a positive team experience and ensure that all team members are adhering to company goals, policies and procedures.
- Evaluate team member performance and provide feedback for improvement; identify strong employees and position the team for success
- Work with Director of Marketing to promote and plan events with the community
- Continually strive to have positive & professional relationships with guests, staff, suppliers, licensing authorities, sales reps and community members
- Effectively communicate with the team; post and communicate information with staff as needed; maintain appropriate level of communication with FOH Management team to ensure food & service is top notch
Salary $55,000 - $64,900
