Position Title: Sommelier, Atelier and Bar Crenn
Reports to: Atelier and Bar Crenn Lead Sommelier Secondary report: Atelier and Bar Crenn General Manager
MAIN ROLE
The Sommelier operates the beverage program in all facets including but not limited to the following:
Cellar, eurocave and the wine fridge maintenance; organization, stocked, cleanliness. Be an authority on the wines used in the restaurant for the uses of wine pairings, by the glass, and those represented as bottle selections on the restaurant’s wine list. Assist Wine Director in order to provide education for the FOH staff in the full range of beverage for the restaurant, including but not limited to wine, cocktails, beer, tea, and coffee. Collaborate with the Wine Director on the selections on the wines used in the restaurant for the uses of wine pairings, by the glass, and those represented as bottle selections on the restaurant’s wine list. Assist the Service Manager and Beverage Director to provide educational outlets, mentorship, and supplies for the FOH staff to enrich and strengthen their skills and knowledge in the company’s wine selections as well as the company’s wine philosophy.
Responsibilities:
- Ensure excellence in the standards and practices of Atelier and Bar Crenn.
- Alongside Lead Sommelier coordinate, collaborate and provide ample and continuous beverage training, tasting and education to ensure staff wine, beer, and beverage knowledge is the best in our industry.
- Actively participate in the cycle of service in order to promote, educate and sell wine to guests.
- Collaborate with the Lead Sommelier on the selections on the wines, beers, and non-alcoholic beverages used in the restaurant for the uses in pairings, by the glass, and those represented as bottle selections on the restaurant’s wine list.
- Assist the management to provide educational outlets, mentorship, and supplies for the FOH staff to enrich and strengthen their skills and knowledge in the company’s beverage selections as well as the company’s beverage philosophy.
- Maintain cellar, eurocave and the wine fridge organization and cleanliness.
- Support Lead Sommelier and FOH team with maintaining an accurate wine list, storage locations, and POS system.
- Actively track and reduce loss through proper pour levels, minimizing waste and loss, alerting Lead Sommelier of corked/faulted wines, and dating bottles when opened to ensure optimal window of drinking.
- Updating the wine list, pairings, educational materials in coordination with Lead Sommelier
- Recommending food and wine pairings for our guests based on their personal preferences and harmonious partners with Atelier and Bar Crenn’s cuisine.
- Continuously taste, research and remain active & relevant in the industry.
- Get to know the regulars, friends of the house and investors – having an awareness of these names/faces is of benefit to best representation of Atelier Crenn , Bar Crenn, and CDG as a whole.
- Be the authority on all beverages sold in the restaurant; i.e. wine pairings, by the glass, bottle selections, beer, and n/a beverages.
- Be present for the FOH staff, maintain a sense of awareness on the floor at all times, and be prepared to lead by example.
- Fill the gaps as they appear/be a team player. This could mean polishing glassware, running food, bussing tables, or anything else that would help a teammate during service.
- Perform restaurant opening and closing activities, organize and alert management of repair and maintenance issues pertaining to the cellar, eurocaves/wine fridges, beverage mise-en-place, etc.
Requirements
Qualities required:
- At least 2 years experience as a sommelier in Michelin starred fine dining.
- Excellent food and beverage knowledge with a strong foundation in the wines and cuisine of France.
- Strong understanding of Microsoft Office Suite.
- Strong understanding of POS and inventory systems.
- Leadership and integrity.
- Desire and ability to teach and foster growth.
- Problem solving, multi-tasking & delegation.
- Initiative & follow through.
- Excellent verbal & written communication.
- Keen attention to detail.
- Must be able to lift 50 pounds.
- Must be able to occasionally climb up and down staircase.
- RBS certification preferred.
