The Lead Pastry Cook will be responsible for dessert planning and production of pastry items including doughs, batters, sauces and finished desserts. This position reports to the Lead Pastry Cook and dotted line to the Executive Chef
More specifically, the Assistant Pastry Chef is a visionary leader and creative force behind the making of pastries, breads and other baked goods offerings at Big Canyon Country Club. In partnership with the Pastry Chef and Executive Chef, the Lead Pastry Cook works to ensure that all activities are consistent with and supportive of the creative business plan. This role will create dessert items that are unique, innovative and forward-thinking. The Lead Pastry Cook, in conjunction with the Pastry Chef, ensures expectations are met. Our team of three individuals are collaborative and driven by the decision to perform to their highest potential while working together to create a culinary experience that our guests will always remember.

• This position reports to the Assistant Pastry Chef and dotted line to the Executive Chef

• In partnership with the Pastry Chef and Executive Chef, the Assistant Pastry Chef works to ensure that all activities are consistent with and supportive of the creative business plan
• This role will create dessert items that are unique, innovative and forward-thinking
• The Assistant Pastry Chef, in conjunction with the Pastry Chef, ensures expectations are met
• Prepares all baked goods, puddings, gelatins, frozen desserts, stewed and baked fruits, pies, cakes, French pastries and other bakery items in accordance with established recipe and presentation standards
• Helps maintain the cleanliness of bake shop
• Sets-up, maintains and breaks down pastry station
• Notifies pastry chef in advance of expected product shortages
• Ensures that work area is safe and secure
• Adheres to state and local health and safety regulations
• Maintains the highest sanitary conditions
• Assists pastry chef in the completion of other duties as assigned
• Always conduct oneself in a professional manner to reflect the high standards of the Big Canyon Country Club
• Follow guidelines for timely food preparation and service to our members and guests
• Maintain proper food service sanitation using all leaned standards in the kitchen through the California Food Handler Certification and providing said California Food Handler Card on the first day of employment
• Will be expected to perform other duties as assigned
Qualifications
• Ability to multi-task in a faced paced, high pressure environment
• Able to work non-traditional work shifts (hours), weekends and holidays
• Ability to be on one's feet for long periods of time
• Ability to bend, reach, stoop when necessary
• Ability to lift but not exceed 40lbs
