What are the responsibilities and job description for the Baker position at Colossus Bakery Commissary?
Colossus Bread in Long Beach, CA is looking for EXPERIENCED bakers to join our passionate team! We are looking for experienced morning bakers, production bakers and laminators (with at least 1 year lamination experience).
We are opening a new commissary baking space in Anaheim this spring. We are looking for individuals to start at our Long Beach bakery with the intention of moving to the new location in Anaheim this Spring (tentatively late May).
The entire bakery crew will be moving to the new location. Our ideal candidate is a self-starter, motivated, and hard-working.
Our morning bakers start early and are responsible for baking and finishing all of our house croissants, scones, cookies and artisan sourdough breads.
All morning bakers contribute to the shaping of our sourdough loaves, experience with high hydration sourdough is a huge plus! Basic knowledge of fermentation, proofing and mixing practices are essential and a passion for breads and pastry is a must!
Production bakers must be experienced scaling large recipes, converting units and batch sizes, and must have experience with basic mixing procedures (cookie, scones, quick breads).
Our production team mixes all of our pastries and shapes all of our croissant pastries.
Laminators must have at least 1 year experience laminating croissant in a high volume commercial bakery setting.
We will train the right applicants, but you MUST have at least 1 year professional kitchen experience or a culinary school equivalent.
Experienced bakers are preferred.
Baking is physical, you must be able to easily lift 50 LB and be able to stand for extended periods of time.
Responsibilities
- Weigh and measure ingredients accurately, knowledge of metric system (grams and kilos)
- Proofing and baking of pastries and croissants
- Mixing, Shaping Baking of artisan sourdough bread
- Knowledge of and experience dough handling
- Experience monitoring dough fermentation and proofing temperatures
- Inventory control, quality control
- Proper cleaning and sanitation standards
Qualifications
- Attention to detail in all aspects of baking
- Dedicated to working as a team towards one goal
- 1 year professional cooking or baking experience or culinary school equivalent
- French pastry and bread experience is helpful
- Must be able to receive regular constructive feedback and adjust to the needs of the bakery and team
