The Regional Chef is responsible for leading all culinary functions for Amazon business dining accounts in NY and Boston.
Some Key Responsibilities:
* Assist on site Executive Chefs with all Culinary Standards set by JLL Clients, Amazon and RA Compass One including all food programs, menu mix, seasonality, presentation.
* Assist on site Executive Chefs with all Q&A Standards including Safety, Sanitation, HACCP Protocols, checklists and log recording, required staff trainings, inspection report action plan responses.
* Purchasing compliance.
* Weekly unit budget reviews, cost controlling, Inventory protocols, complete weekly COGA, receiving logs.
* Client relations, reacting to client requests from culinary perspective, action planning.
* Catering support as needed, provide onsite unit Chefs culinary support, review catering menu mix and seasonality.
* Participate in all Culinary related calls with clients and Compass One partners as required.
* Act as Regional Purchasing Champion for RA Compass One and participate on bi-weekly calls.
* Create Amazon Menu library that can be used for any future NROs.
* Performs other duties as assigned.
Qualifications:
* Culinary Degree, or comparable four-year culinary development experience
* Minimum of 5-7 years of experience, multi-unit experience preferred
* Willing to travel throughout the region- ESTIMATED 10% TRAVEL
* Computer skills and experience with MS Office products including Word, Excel, PowerPoint, and Outlook, preferred
* Excellent communication skills, both verbal & written.
* Strong understanding of P&L’s & inventory control.
* Ability to translate recipes to practical experiences, and continuous effort to improve.
* Proven to be detailed and accurate, a team player and a leader.
* Understanding of FOH Restaurant operations a plus.
* Professional level computer skills to include the ability to utilize Microsoft Office products, email, etc.
