- Bookkeeping
- Properly clock in and out in accordance with the schedule posted.
- Record all cook and waste properly on the cook and waste sheet.
- Maintain a 60% deli gross week to week.
- Maintain a 15% - 18% deli waste week to week.
- Order all items needed for the deli to maintain and run properly.
- Key in cooked and waste sheets daily.
- Key in any deli invoices and balance daily.
- Complete deli analysis sheets daily and address any issues.
- Complete the deli daily purchases by associates form and watch video.
- Count inventory weekly and key into computer.
- Maintain awareness of local competitors and report to the Manager.
- Review performance data (Sales, Gross Profits, and Expenses) to monitor and measure productivity, goal progress, and activity levels.
- After completing closeout e-mail numbers to supervisor and designated office staff.
- Housekeeping
- Maintain a neat, tidy, and orderly work area.
- Sweep and mop floors in deli area, coolers, and freezers.
- Clean shelving and racks in deli area, cooler, and freezers.
- Clean cookers thoroughly.
- Clean walls and ceiling to prevent grease build up.
- Clean sinks thoroughly and clean out grease trap where applicable.
- Change oil in cookers periodically when needed.
- Keep breading containers clean and breading sifted.
- Wash all dishes from days use.
- Take trash out to the dumpster.
- Deli case has to be cleaned inside and out. Pans cannot be yellowed and glass must be streak free.
- Check equipment and temperatures daily.
- Evaluate the overall deli appearance and delegate work duties to staff accordingly.
- Stocking
- Stock items from the freezer to cooler as needed.
- Put up any delivery trucks that arrive after being checked in properly.
- Rotate all products in cooler when truck arrives. New product goes under the old product. Always face labels outward for easy visibility.
- Change syrup box or CO2 tanks for fountain drinks.
- Keep fast food area stocked with coffee, tea, alligator ice, and condiments.
- Keep sauce condiments and deli bags stocked by the register for fast customer service.
- Be able to read, understand, and write the English language at the eighth grade level.
- Be able to perform arithmetical calculations at the eighth-grade level in order to be able to make change, complete shift reports, account for a variety of products during vendor check-in, and figure gross margin.
- Be able to have sufficient visual acuity to check identification and process money orders.
- Be able to read and understand instructions for operating electronic cash register, all deli equipment, and etc.
- Be able to lift up to 50 lbs. and carry cases of potatoes, chicken, and jugs of oil.
- Be able to stock shelves and coolers
- Be able to react to a fire by lifting a fire extinguisher weighing 15 lbs. and moving it to the fire area.
- Be able to tolerate exposure to gasoline fumes and cleaning products.
- Be able to climb a ladder and work off of it.
- Be able to sweep and mop floors, dust shelves, and lift and carry trash containers and place in an outside bin.
- Be able to clean the parking lot and grounds surrounding the store.
- Be able to work in a freezer at a temperature of -10 degrees up to 5 minutes at a time.
