What are the responsibilities and job description for the Sous-Chef position at Fiorella?
We are looking for an enthusiastic Lead Line Cook or Sous Chef that embodies the professionalism and leadership qualities needed for this position. Fiorella Clement is looking for Sous Chef with a passion for Italian food for our wood-fired driven restaurant at our original Richmond location in San Francisco.
Candidates will play a critical role in supporting the development of the menu, and sourcing product along with leading and training our kitchen team at Fiorella. JOB DUTIES:
- Working with seasonal ingredients
- Executing menu items from start to finish. This includes preparation of ingredients, butchery of proteins, cooking and plating of dishes.
- Assist in managing all kitchen employees including training, coaching and scheduling
- Exceptional communication and supervisory skills
- Inventory control, food & labor costing, and product sourcing
- Food safety and sanitation controls
DESIRED SKILLS:
- Must have a strong foundation in culinary technique with a fundamental understanding of how to manage a daily changing, market-driven menu
- 3 year of related Italian Cooking experience. Wood-fired cooking a plus
- Dough Making, Enforcement Of Safety / Sanitation Standards, Equipment Maintenance, Expediting, Inventory, Kitchen Cleaning/Sanitation, Kitchen management, Meat Butchery, Meat Cookery, Pasta Cooking, Pizza Cooking, Portioning, Receiving/Organizing, Scheduling, Vegetable Breakdown, Vegetable cookery
- Experience with back of house administrative and managerial duties a must
- Proficient in Microsoft Word and Excel
