Job Title: Food and Beverage Manager

Reports To: General Manager

Location: Trilogy La Quinta, CA

Summary

The Food and Beverage Manager is responsible for all food and beverage production and service for the club café and catered events ensuring maximum guest satisfaction, through planning, budgeting, organizing, directing, and controlling the front of house operation and administration. They directly supervise all café staff.

Duties/Responsibilities

  • Ensures that guests always receive an exceptional dining experience.
  • Develops an operating budget for each of the department's revenue outlets; after approval, monitors and takes corrective action as necessary to help assure that budget goals are attained.
  • Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.
  • Inspects to ensure that all safety, sanitation, energy management, preventive maintenance, and other standards are consistently met.
  • Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized.
  • Approves update on menus, and pricing and proposes catering and special event menu for clubs and committees.
  • Establishes quantity and quality output standards for personnel in all positions within the department.
  • Ensures that all legal requirements are consistently adhered to including wage and hour and federal, state, and/or local laws pertaining to alcoholic beverages.
  • Develops and implements policies and procedures for food and beverage and maintains records.
  • Monitors purchasing and receiving procedures for products and supplies to ensure proper quantity, quality, and price for all purchases.
  • Consults with General Manager and Asst. General Manager with all changes to menu and staffing.
  • Conducts weekly meetings with General Manager and Asst. General Manager and monthly meeting with café staff monthly.
  • Helps develop wine lists and bottle/glass wine sales and Alcohol sales promotion programs.
  • Ensures correct handling procedures to minimize glassware breakage and food waste.
  • Addresses member and guest complaints and advises the Asst. General Manager about appropriate corrective actions taken.
  • Develops interesting ways of promoting club functions in the dining room, lounge, and other outlets.
  • Assist in planning and implementing procedures for special club events and banquet functions.
  • Maintains appearance, upkeep, and cleanliness of all food and beverage equipment and facilities.
  • Approves all product invoices before submitting them to the accounting department.
  • Manages physical inventory verification and provides updated information to the accounting department.
  • Responsible for the proper accounting and reconciliation of the Point of Sale (POS) system and member revenues.
  • Maintains records of special events, house counts, food covers, and daily business volumes
  • Audits and approves weekly payroll.
  • Implements promotional and entertainment ideas for “Happy Hours”.
  • Complete all food inventories, back bar, liquor, dry wear, and periodic glass and back wear inventories.
  • Ensures that associates are always in clean, tidy uniforms and are always in compliance with the uniform policy.
  • Creates and is required to operate within efficient labor budgets for each season, tracking labor spending and providing input regarding capital projects and initiatives.
  • Manages, assigns, and directs work assignments, mentors, and evaluates associates.
  • Interviews, hires, and trains employees; appraises performance; rewards and disciplines associates.
  • Addresses complaints from guests and associates; and resolves problems in accordance with department policies with guidance and support from the General Manager and Assistant General Manager
  • Develops annual goals and objectives.
  • Carries out Managerial responsibilities in accordance with the organization's policies and procedures.
  • Is physically present to work a regular, reliable, and predictable work schedule in accordance with business demands, and maintain a consistent and regular attendance record.
  • Performs special projects and other responsibilities, tasks, or duties as requested
  • Work any additional shifts or work any additional hours that may be needed to maintain and keep up with the responsibilities of keeping the café staffed.

  • Participate in open communication and provide feedback to management regarding operations, staffing, personal development, and operational productivity.

Supervisory Responsibilities

  • Responsible for supervising, planning, training, and directing all personnel daily
  • Order supplies to ensure proper par levels including all beverage and foodservice items and other tasks as required.
  • Can perform all positions within the department
  • Assist in completing weekly and monthly department forecasts.
  • Submit and follow-up maintenance requests and equipment shortages.
  • Order, inventory, and control liquor, beer, and wine
  • Follow all company and safety and security policies and procedures; report accidents, injuries, and unsafe work conditions to the manager; complete safety training and certifications.
  • Ensure uniform and personal appearance are clean and professional; maintain the confidentiality of proprietary information; protect company assets.
  • Welcome and acknowledge all guests according to company standards; anticipate and address guests service needs.
  • Speak with others using clear and professional language.
  • Develop and maintain positive working relationships with others; support team to reach common goals.

Education / Qualifications

  • Must be 21 years of age or older.
  • High School diploma or equivalent, preferred.
  • Any combination of education, experience, and training that provides the required knowledge, skills, and abilities.
  • 5 years' experience in a Managerial capacity or above preferred
  • Must be able to provide evidence of eligibility to work in the United States of America.

Certificates, Licenses, and registration

  • Ability to obtain and maintain a Food Handlers Card from Riverside County.
  • Managers service license for Riverside County.
