Created and operated by the VCR Group, Flyfish Club spans over three floors with a Restaurant and Bar, Private Dining Room, Cocktail Lounge that features live entertainment, as well as a 14 seat Omakase Room that offers two seatings every night.
Job Description:
Flyfish Club is seeking an experienced and dynamic Sushi Chef to work primarily in the Omakase Room within Flyfish Club, as well as support in deliveriug the Sushi program in other areas of the business. The ideal candidate will have experience working in either Sushi or Omakase concepts and be familair with receiving, handling and breaking down fish to standard needed. They should possess a keen eye for detail, strong people leadership skills and a passion for hospitality.
Key Responsibilities & Requirements:
- Delivers exceptional hospitality in all guest interactions. Goes above and beyond to create an amazing guest experience
- Knows and has experience with the different cuts of a fish loin and fillets which are used in sushi making and can train to a team.
- Posseses knife skills for more advanced fish butchery
- Prepare all food products according to the prescribed methods, both during service and prior preparation
- Cuts fish, slices sashimi and prepares nigiri with speed, accuracy & consistency
- Leads by example in all aspects of the job, including sanitary practices, work detail, consistency, and reliability
- Perform job functions with attention to detail, speed, and accuracy
- Acquire recipe knowledge and section setup to smoothly execute service
- Ensure all items on station are properly stored, labeled and dated
