Head Chef/Kitchen Manager
Gardina's Kitchen & Bar is seeking a highly motivated, detail oriented Head Chef/Kitchen Manager to lead our BOH operations. The ideal candidate will have experience in leading a team (hiring, training & disciplining), food ordering, menu costing & building, scheduling, special events planning and collaborating with hands-on ownership group. A proven track record is a requirement for hire, so please be prepared with 3-5 applicable references.
Primary Duties:
- Ensuring that menu items are re-created accurately, consistently & up to Gardina's standards
- Also, making sure we are consistently prepped & that kitchen staff are accurately re-creating prep recipes
- Maintain excellent level of cleanliness in kitchen, prep areas, coolers etc.
- Have a cleaning plan & enforce it
- Collaboration & communication with restaurant owner/management on a frequent basis
- Good news or bad news, we want to hear it all.
- Be “the boss”: lead by example with a firm but fair approach. You are in charge, and the rest of the kitchen staff needs to know what your expectations are.
- Being the boss doesn’t mean the end of your cooking days.
- Be present on nights & weekends
- This is crucial to the success of our kitchen and not negotiable, however we want you to have time for a personal life as well!
- Efficient, organized & punctual
- Be 10 mins early instead of 10 mins late, don’t wait until the last second to work on projects, use your time wisely!
- You are the fire department - if someone calls in, or the kitchen is buried and needs help or equipment has failed: you are the person to help, make decisions and put out the fire!

Secondary Duties:
- Making sure all kitchen equipment/appliances & refrigeration is operating properly
- Know who to call and when
- Periodically inventory kitchen supplies, small wares & china for re-order
- Consistent portion control & limiting food waste
- This boils down to kitchen staff being accurate & paying attention but also ideas you may have to limit food waste.
- Be a leader in CIVIL interaction with the front of the house - promote a team atmosphere when mistakes are made!
- Menu development & implementation in collaboration with ownership
Job Type: Full-time
Pay: $50,000.00 - $60,000.00 per year
