The Banquet Chef is responsible for all banquet food for indoor and outdoor meetings, weddings, events and conventions, including: planning, scheduling, organizing and directing work, and training personnel, ensuring all procedures and standards are in compliance with NPS, Brand Standard and Internal Audits. The Chef is also responsible for the ordering of supplies, the supervision & training of staff, the monthly inventories, including labor and food costs, and the deputation of sous chefs. The Banquet Chef also monitors employee clock in and clock out, and assists in oversight of Employee Dining Room.
The “must haves” for this position include:
- 1 year banquet sous chef experience
- U.S. Drivers License/ Successful completion of MVR
- Multi Outlet resort experience
- Cold and hot food preparations, banquet production
- Knowledge of different stations like grill, garde manger and sauté
- High volume cooking experience
Job responsibilities include but are not limited to:
- Responsible for all banquet food for indoor and outdoor meetings, weddings, events and conventions - include planning, scheduling, organizing and directing work, training personnel, and recommending applicants for employment or for discipline, termination or retention.
- Supervise the operation of banquet kitchen.
- Liaise with other sous chefs to organize daily timely meals – quality, taste and presentation.
- Ensure all the coolers and work areas are kept to Brand standards
- Conduct equipment and skills training as and when needed
- Ensure supplies and food items are replenished and, as needed, inventoried for daily operations during scheduled store room operation hours.
