What are the responsibilities and job description for the Sous Chef position at Heatherwood?
Summary: Assists the Executive Chef in all phases of meal preparation. Prepares salad bar offerings,
desserts, and bakery items and is responsible for maintaining the highest standards of
sanitation and safety practices in all phases of kitchen operation, food preparation and
storage.
Reports to and is supervised by the Executive Chef.
Functions:
POLICY/PROCEDURES/ADMINISTRATION
• Maintains a working knowledge of culinary methods as related to ingredient preparation and recipe
execution. Assists Executive Chef with meal preparation as assigned.
• May assist in procurement of food inventory and supplies.
• Properly labels and stores food items in accordance with safe storage standards.
• Understands the operation and maintenance of kitchen equipment (food processor, dishwasher,
convection oven, etc.)
• Maintains a clean and sanitary work environment, including floors.
• Responsible for creation and preparation of baked food items, breads, desserts, etc.
• Performs scheduled cleaning of equipment and work according to schedule as planned by the
Executive Chef.
• Sets up the salad bar as required.
• Assists in organization and rotation of all stored food items.
• Assists on the serving line when needed.
• Independently resolves personnel conflicts and service problems within scope of responsibility.
• Attends staff meetings and in-services as required.
• Performs other duties as assigned.
REQUIREMENTS
• Minimum education of high school graduate with additional training in culinary arts preferred.
• Must hold current Serve Safe certification.
• Must have the ability to read, write, and follow directions both verbal and written.
• Must have the willingness and ability to independently resolve problems and make decisions within
scope of authority.
• Must be willing and able to perform simple repetitive tasks.
• Must be in designated uniform during working hours.
• Must be willing to lead and resolve conflicts as well as work as part of a team.
• Must be willing and able to work a flexible schedule to include weekends and holidays.
• Must be customer focused and display excellent customer service skills.
• Must have the physical ability to stand for long periods of time and to exert 25 lbs. of force frequently,
50 lbs. occasionally, to lift, carry, push, pull or otherwise move objects.
