As the city's first true luxury hotel and only Forbes-recommended hotel in the state, this 23-story tower has 247 rooms, 15,000 square feet of banquet space, and 3 food and beverage outlets. This includes The Capital Grille, Tastings - Wine Bar & Bistro, and in-room dining.

What will I be doing?

As Executive Sous Chef, you would be responsible for assisting in the direction and administration of the planning, preparation, production and control of all culinary operations in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:

  • Assist the Director of Food & Beverage in the direction and oversight of all culinary operations, to include, but not limited to, preparation and production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls, forecast needs, budgeting, and overall profitability
  • Assist the Director of Food & Beverage by interacting with guests, clients, and all team members to monitor and assess satisfaction trends, evaluate and address issues, and make improvements accordingly
  • Assist the Director of Food & Beverage in creating and implementing menu selections for special banquet themes and events based on current food trends, regional tastes, and client budgetary guides and expectations in partnership with the Director of Food and Beverage, as needed
  • Audit for quality, safety, and cleanliness to ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
  • Monitor and develop team member performance to include, but not limited to, providing supervision, conducting counseling, leading department meetings, and assisting with evaluations, training, scheduling and assigning work and delivering recognition
