POSITION TITLE: Banquet Captain
REPORTS TO: Food & Beverage Manager / Banquet/Catering Manager
POSITION SUMMARY:
Banquet Captains oversee catered events. The Captain should comfortable assigning specific tasks or services, ensuring that safety and sanitation codes are followed, and train staff to recognize improper guest behavior. Banquet captains also work with the food and beverage director and coordinate with kitchen staff to get details of the menu, food preparation activities, and service standards.
DUTIES AND RESPONSIBILITIES:
- Direct/Supervise, counsel and assist our banquet wait staff on all breakfast, lunch and dinner functions.
- Assist with food and table prep before the event begins.
- Set up buffets with food presentation standards and practices in mind, ensuring safe food handling performance.
- Serve plated dinners to guests and respond to requests for beverages and other needs.
- Respond quickly to requests from guests, supervisors or management in a timely, friendly and efficient manner.
- Being knowledgeable of event menu items and their contents, appropriate table settings and service ware, and the correct preparation and garnishing methods.
- Communicates with Banquet cooks to ensure timeliness of food.
- Capable of ladling soup, tossing salads, portioning pies and desserts, brewing coffee and tea.
- Assist with clean up after event and assists with inventory, food storage and other closeout tasks.
- Maintains Hotel equipment and ensures that meeting spaces are kept in top condition; notifies the appropriate parties of any needs or major repairs.
- Attend scheduled meetings with immediate supervisor (Banquet Manager) to discuss upcoming events details and menus.
- Follow through with any additional requests/duties assigned by immediate supervisor (Banquet Manager), as needed and instructed.
- All other duties as assigned.
QUALIFICATIONS:
- Two years food, beverage and customer service experience. Must have prior experience in supervising wait staff, training and disciplining.
- High school diploma or general education degree (GED).
- Strong organizational and customer service skills.
- Ability to perform well in a high-pressured work environment.
- Adequate mathematical skills.
- The ability to walk and stand throughout the majority of each shift.
- Able to regularly lift 20-50 pounds.
- Flexibility of schedule and ability to work weekends and holidays
