Kitava is looking to add an experienced kitchen leader to our friendly team in San Francisco. This important team member will be the taskmaster of the kitchen, responsible for executing high food quality, consistent menu availability, and efficient service in a fun and safe work environment.

About the role:
The PM Kitchen & Expo Lead is the taskmaster of the kitchen and reports directly to Kitava’s Chef. The primary responsibility of the PM Kitchen Lead is to ensure all processes and procedures are followed correctly in the kitchen to ensure consistent menu availability, high food quality, efficient service, and a safe work environment.

Job responsibilities include:
Expo
- Serve as the primary Kitchen Expeditor during busy service periods
- Responsible for making sure meals are plated accurately and efficiently
- Ensure full orders are handed off to front-of-house accurately and in a timely manner
- Supervise and direct Line Cooks during service to ensure smooth operations
Maintain Food Safety and Cleanliness standards
- Enforce food safety and sanitation guidelines, adjusting and teaching when necessary
- Ensure staff maintains a clean and safe work environment
- Maintain order and cleanliness of walk-in, enforcing FIFO method
- Ensure food is held and cooled to proper temperatures
Food Service Daily Operations
- Maintaining and working with Kitchen Manager on managing daily inventory and needed prep
- Perform all kitchen duties when needed, including prep, expediting, and all Line stations
- Ensure the entire menu is available for service throughout service.
- Train and monitor kitchen staff to ensure effective, safe, and consistent job performance
- The line is well stocked during service and set up for staff to execute efficiently.
Serve as an extension of the Kitchen Manager including
- Assist with ordering
- Adjust and maintain prep & order pars as needed
- Waste tracking and management
- Ensure consistent recipe execution
- Assist with recipe development as needed
Required Experience:
- 2 years working in a Supervisor or Lead position at a restaurant or high-volume kitchen
- 5 years in a back-of-house service industry position
- Previously held the position of Line Lead, Shift Supervisor, Head Cook, Sous Chef, or other significant kitchen leadership role
- Has experience with restaurant POS systems (eg. Toast, Square, etc)
- Comfortable using Google Docs and other digital software products
Preferred:
- Fast-casual restaurant experience
- Bilingual (Spanish / English)
- Familiarity with restrictive diets (i.e. gluten-free, paleo, vegan, keto, etc.)
- Has implemented systems for employee onboarding, training, inventory tracking, and ordering
- Certified ServSafe Food Manager
