Positions Responsibilities:
- Assist in developing new product formulations including preforming all lab work associated with research and development. This will include being able to break down product target samples into individual components and rebuild. Laboratory procedures involved in this will include but not be limited to:
- Using density meters for proof and specific gravity measurements for determining sugar and alcohol content.
- Using buret and pH meter for titrations for pH and acidity content.
- Perform distillations to determine proof in high sugar products.
- Using spectrophotometer to determine either color or optical purity.
- Using Gas Chromatograph for determining congener and fusel oil content of bulk alcohols.
- Using all laboratory balances and scales for precision measurement of weights.
- Using precision pipets, graduated cylinders, flasks, beakers, stir plates, etc.
- Using Turbidimeter for measuring product clarity.
- Being able to add individual components together in the correct order of addition to produce a product in line with a desired profile as determined by Marketing/R&D or to mimic the organoleptic properties of a target sample. Individual components will include but not be limited to bulk alcohols, sugars, acidulants, pH buffers, certified colors, cream bases, preservatives, flavorings, etc.
- Any other laboratory procedure as needed.
- Developing a detailed understanding of the Processing and Bottling departments and how they operate. This will include gaining knowledge of all tanks, piping, hoses, mixing procedures, sampling procedures, gauging, all bottling equipment such as cleaners, fillers, cappers, labelers, etc.
- Work closely with the Director of Marketing to create new product profiles. This will include attending meetings with Marketing/Sales for brainstorming/idea generation/tasting, etc.
- Monitor new formulation costs to ensure lowest cost / highest quality. This will involve meticulous attention to individual ingredient usage level and their associated cost.
- Set up and monitor product taste panels and perform all data analysis on panel results. This will involve preparation of all samples to be tasted for any taste panel needed for comparing one product to another, likability testing, etc.
- Perform all product shelf-life testing of newly formulated products. This will involve making samples of newly formulated products and putting them through a series of testing conditions to monitor stability. Conditions include but will not be limited to: high heat, UV light, cool, extreme cold, etc.
- Produce all samples needed for Sales and Marketing.
- Work closely with flavor suppliers to have new flavors approved by the TTB. This will involve constant communication with flavor supplier representatives to get flavors approved by the TTB as fast as possible.
- Monitor levels of limited components in flavorings to ensure proper finished product label verbiage. Each flavoring used has a Flavor Ingredient Data Sheet which details every component in a flavor that has a maximum limit set by the TTB. Maximum flavor limit levels are guided by these limited components.
- Create and submit finished product formulas to TTB. This involves becoming familiar with the TTB Formulas Online website and being able to correctly submit new formulations for approval.
- File new label approval applications (COLAs) with the TTB. This involves becoming familiar with the TTB COLAs Online website and being able to correctly submit new labels for approval.
- Communicate with various departments on project and approval statuses. This involves keeping detailed logs of all products in development and conveying their statuses to Operations, Marketing and Sales as needed.
- Cleaning and general upkeep of the R&D lab.
- All other tasks as assigned by the Director of Corporate Research & Development.
Skills and Requirements:
Minimum of Bachelor’s degree in a science related field, preferably Chemistry, Biology or Food Science.
Strong general laboratory and mathematical skills.
Knowledge of Microsoft Windows, Excel and Word.
Good verbal and written communication skills.
Multi-tasking and time management skills.
Excel in a fast paced environment.
