What are the responsibilities and job description for the Sous Chef (Dietary) position at Mary's Woods?
Mary's Woods is seeking a Sous Chef with a commitment to both culinary excellence and leadership to work in our assisted living kitchen. As a Sous Chef, you will be responsible for assisting the Chef de Cuisine with the overall food production in our assisted living neighborhoods as well as leading and supervising the dietary kitchen team. You will be essential in preparing freshly made meals and working closely with the heart of the house and the dietary team to provide an excellent dining experience for our assisted living residents and guests.
At Mary's Woods, we provide residents with over 100 years of history in a 40-acre wooded wonderland. We are a not-for-profit Life Plan/Continuing Care Retirement Community that prides ourselves on our rich heritage, spirit of caring, welcoming culture, historic grounds, and amazing views. We have a variety of dining venues to choose from, including 3 restaurants, 2 bistro cafes and multiple dining locations within our assisted living and resident care neighborhoods.
Below are some of the core responsibilities, experience and skills needed to be successful:
- Prepare palatable and proper-portioned food for residents, guests, and staff in accordance with dietary spreadsheets and production sheet, standardized recipes, preparation methods, portion control, time schedules and sanitary standards as well as serving procedures
- Provide staff with daily production requirements and the resources to successfully complete their tasks
- Direct oversight of production and quality control in daily operations
- Create and maintain flow of goods and product rotation, labeling, and dating, and utilizing product to reduce waste
- Assist Chef de Cuisine in purchasing, receiving, and storing all products for daily menu
- Able to make decisions based on established guidelines, in the absence of Chef de Cuisine, to ensure consistency
- Ensure that production staff has the right items for production and are following production protocols (recipes and logs)
- Lead by example to bring up the level of performance of all staff and establish a sense of pride in well-done work
Education and Experience Required:
- Education and or experience equivalent to the completion of a high school diploma or GED
- 2 years of culinary management preferred
- Culinary school degree preferred
- Experience in a senior living community preferred but not required
