This position is responsible for the culinary activities of the assigned station with primary responsibility for production and preparation of all menu items, recipes, and food sanitation, to obtain optimum efficiency, economy of operations and maximize profits. Responsible for preparing desserts, yeast products, breakfast pastries, specialty cakes, confections, and other foodstuffs for consumption by guests in eating establishments.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Consistently scales, mixes, and pans pastry recipes according to the formulas accurately.
- Reads menu to determine food requirements and either procures food from storage or writes food items down on order guide to be ordered from vendor.
- Adjusts thermostat controls to regulate temperature of oven(s) and proofer.
- Cooling and storing products properly and within sanitary guidelines, by wrapping and labeling products storing in appropriate locations.
- Completes temperature and cleaning logs.
- Put away pastry items using the first in, first out method making sure older products are being used before new items.
- Put away ingredients ordered from vendors.
- Grill Sunday Caramel Rolls: prep pans, proof and bake to continuously product fully baked and tender caramel rolls for the Grill on a consistent basis.
- Inventory of all items in the pastry department, which includes the walk-in cooler, reach-in coolers, freezer, and pastry area dry storage items. Be capable of quantifying items per inventory sheets, i.e., per pound, box, case, count, etc.
- Proof yeast products knowing when the product is at the proper proof temp, moisture, as well as maximum proof time for each product.
- Consistently bake all pastry items at the correct temperature and time.
- Breakfast Pastries (Sunday Brunch) proof and bake yeast breakfast items, bake all other non-yeast breakfast items to the appropriate doneness and finish products appropriately by using glazes, toppings, powdered sugar, etc. consistently.
- Specialty cakes, i.e., birthday, anniversary, wedding cakes, grooms cake, etc., decorate cakes according to the order and Standard Operation Procedures (SOPs.)
- Theme Stations: Candy Bar, Fondue, Flambé, Cupcake, etc., prep stations per Standard Operation Procedures (SOPs) and set up table to look clean, an abundance of food, upscale, and decorations match theme.
- All pastry items must be done correctly and consistently. It should look and taste the same, not underdone or burnt.
- Correctly fill BEOs per order: Buffets - whole desserts cut evenly and straight and finished decoratively. Plated desserts are cut evenly, garnished with at least three components and appropriate sauce.
- Help to come up with Grill Dessert of the Month choices.
- Keep an eye on standard desserts, i.e., Grill, Lobby, Room Service, etc. to make sure items are always stocked also rotating new and old to make sure first in first out to ensure best quality.
- Prepares breakfast pastries for next days service.
- Works in an organized and sanitary manner.
- Maintains a clean, safe and sanitary facility by adhering to food quality standards and sanitation regulations.
- Any and all other duties as assigned.
Qualifications
MINIMUM REQUIREMENTS
- Associates degree or equivalent
- Four (4) to six (6) years related experience
- Food safety certification in state of Minnesota
