SYSTEM TITLE: Lead Line Cook
POSITION REPORTS TO: Kitchen Shift Manager
JOB SUMMARY: Cooks on Line and delegates menu food orders to be prepared in compliance with established standard recipes and procedures. Ensures effective and consistent communication between Line Cooks. Responsible for overall food production quality and consistency.
EDUCATION, EXPERIENCE AND TRAINING FOR POSITION (required and preferred):
· High school diploma or GED equivalent required.
· Minimum of three (3) years cooking experience required with an emphasis in one of the following specialty areas: short order cooking of burgers, steaks, pastas, sandwiches and breakfast items such as eggs and pancakes, etc.
· One (1) year kitchen supervisory experience preferred.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
1. Cooks, sautés, broils, grills, fries, steams, bakes and wok cooks meats, pizza, fish, vegetables, and other foods according to recipe at correct temperature by regulating temperature of ovens, broilers, grills, and roasters on Line and expedites orders.
2. Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
3. Sets up and maintains workstation for next shift.
4. Assigns and/or completes assigned station prep lists.
5. Inspects, cleans, sanitizes, and maintains food preparation areas, such as equipment, work surfaces, and serving areas, to ensure safe and sanitary food-handling practices.
6. Prepares, portions, arranges, garnishes food, and presents food items per Bingo kitchen standardized recipes.
7. Responsible for maintaining waste, temperatures, and other health and safety logs/reports daily.
8. Assists with the training and supervision of all kitchen staff.
9. Assists with the development and implementation of department SOPs, station prep lists, and safety procedures.
10. Delegates kitchen Line station duties for shift.
11. Establishes and maintains effective and consistent communication on the production Line.
12. Maintains open communication channels with front of house and management staff.
13. Responsible for safe food storage, portioning, and presentation on the Line.
14. Ensures that all sanitation, health and safety procedures are followed.
15. Performs other duties as assigned.
LICENSES OR CERTIFICATIONS (required/preferred):
- Required to possess and maintain a valid WA State health card/food handler permit.
SPECIFIC SKILLS/KNOWLEDGE/ABILITIES REQUIRED FOR POSITION:
- Able to sauté, cook, broil, grill, and steam.
- Has previous experience in protein fabrication and making a variety of soups and sauces.
- Must be fast and able to organize and manage up to fifty (50)-line order tickets at a time.
- Must possess a strong communication skillset and the ability to train others.
- Demonstrate excellent guest service skills.
- Demonstrate ability to handle multiple tasks simultaneously with speed, efficiency and attention to detail.
- Exhibit ability to work independently with occasional instruction or assistance.
- Demonstrate ability to follow oral and written instructions.
- Proven working knowledge of Kitchen Design and the operation of grills, roast-and-hold ovens, conventional and convection ovens, fryers, etc.
- Demonstrate ability to communicate effectively both verbally and in writing.
- Utilize portable radio or cell phone to stay in contact with the Department, as needed.
- Working knowledge of health & safety standards, and safety regulations, as needed.
- May be required to climb ladders and/or handle hazardous chemicals.
ADDITIONAL REQUIREMENTS:
- Ability to lift at least 60 lbs., occasionally higher with assistance. Ability to maneuver in all areas of bingo, ascent/descent from stairs, frequent standing, walking, sitting, reaching, stooping, kneeling or crouching, and/or prolonged periods of time focusing on tasks. Must be able to stand and work on feet for 8 hours or more per shift. May regularly need to lift/ move, push or pull up material or boxes necessary to the job functions, with or without assistance.
- Specific vision ability includes close vision, distance vision, color vision, peripheral vision, and depth perception. Visual acuity to discern and examine text, graphics, color and symmetry. Speech to communicate clearly, express ideas and convey information in an understandable manner. Ability to hear for listening comprehension and to understand ideas presented through spoken words and sentences. Manual dexterity to operate office or required equipment and examine or update documents, records, data, instructions, logs, and files.
- Exposure to second hand smoke, moderate to high noise level, bright lights, fluctuating temperatures or weather conditions.
