We are currently seeking a talented and experienced Executive Chef to join our team.


Role Description


This is a full-time, on-site role for an Executive Chef at Nonna’s Italian Bistro. The successful candidate will oversee kitchen operations, ensuring high standards of food preparation, hygiene, and service. Responsibilities include managing kitchen staff, purchasing ingredients, maintaining cost controls, and collaborating with sales and marketing teams to enhance restaurant revenues.


Qualifications


• Minimum of 4 years of experience in food preparation and cooking

• Strong culinary skills with a focus on Italian cuisine (preferred)

• Knowledge of hygiene and food safety regulations

• Excellent attention to detail and time management skills

• Ability to work effectively in a fast-paced environment

• Formal culinary training/certification is beneficial


Primary Duties and Responsibilities


• Oversee daily kitchen operations and food production areas.

• Provide training and guidance to kitchen staff, ensuring adherence to quality standards.

• Establish and enforce food specifications, portion controls, recipes, and sanitation standards.

• Ensure compliance with local health department sanitation laws.

• Manage food purchasing, ensuring proper ordering, quality, and pricing.

• Monitor and control food and labor costs while maximizing guest satisfaction.

• Develop and maintain training programs for staff.

• Coordinate and manage par stock levels, food portion sizes, visual appeal, taste, and temperature.

• Understand and manage daily forecasts and customer counts.

• Prepare and submit required reports in a timely manner, including payroll, revenue, schedules, and quarterly action plans.

• Conduct staff performance reviews and approve weekly payroll.

• Monitor loss prevention in the kitchen area.

• Maintain regular attendance and compliance with scheduling needs.

• Ensure high standards of personal appearance and grooming.

• Perform additional duties as requested by the General Manager.

• Responsible for long-term and short-term kitchen planning and operations.

• Create and develop menus for events, working with sales and marketing teams.

• Assist in restaurant operations and banquets/events as needed.

• Recommend menu changes to the General Manager.

• Manage kitchen staff to attract, retain, and motivate employees, providing a safe environment. This includes hiring, training, developing, coaching, and counseling, conducting performance and salary reviews, resolving problems, providing open communication, and disciplining and terminating as appropriate.

• Monitor and control kitchen maintenance and sanitation to ensure a healthy, safe work environment that meets/exceeds standards and regulations.

• Lifting objects, 30-35 pounds, 3 to 5 times during the course of the shift (e.g., top round, prime rib, frozen boxes).

• Carrying items ranging from clipboard to food products to small equipment.

• Kneeling during inspections for proper cleanliness and monitoring, as well as during lifting.

• Full mobility is required to inspect and monitor the kitchen environment.

• Continuous standing while expediting, cooking, or inspecting, ranging from brief periods (15 minutes) to longer periods (1 hour), accounting for at least 50% of the day.
