About the Role
The Banquet Chef reports to the Executive Sous and will be responsible for all operations of the Banquet back of the house operations.
Role Responsibilities
- Prepare the meals as requested by guests
- Effectively price menu's
- create specialty meals/menus
- able to present food as needed
- Ability to work independently and coach prep workers as needed
- Responsible for pricing out all meals, inventory control, and timeliness of monthly inventory, theft control, food cots, production, ordering, and all aspects of running the banquet kitchen.
- Executes all banquet functions & tastings per specific BEO requirements with an eye to precision & attention to detail
- Recovers all food by product at the end of the function for “retooling” or use in the restaurants.
- Recovers all kitchen equipment, display pieces & small wares at the end of the function for return, if applicable.
What’s Required
- College degree preferred with additional degree or certification from established culinary school and 3-5 years of experience and/or training; or equivalent combination of education and experience.
- Able to effectively communicate in English.
- Must be able to work varied shifts, weekends and holidays as needed
- Exposure to casino related environmental factors including but not limited to second hand smoke, excessive noise, and stress related to servicing customers in a high pressure and fast paced environment
