The Sous Chef needs to be a strong communicator, thrive under pressure, and have solid knowledge of various cooking methods, ingredients and procedures. They are true professionals who practice safe food and knife handling, prepare dishes with the utmost care and attention, and work quickly to serve a high volume of guests throughout the day. They are meticulous when it comes to creating memorable dining experiences for our guests. They are obsessive about the tiniest things. What You Do: You will assist and support the food preparation and service delivery teams for the restaurant and banquet operations by ensuring they have all operating equipment clean and ready to use in an orderly fashion.
  • Dishwashing: Washing dishes, glasses, utensils, and other kitchen equipment by hand or using a commercial dishwasher.
  • Sorting and Stacking: Sorting dishes and utensils appropriately and stacking them in an organized manner for efficient cleaning.
  • Pre-rinsing: Pre-rinsing dishes to remove food residue before placing them in the dishwasher.
  • Loading and Unloading: Loading dirty dishes into the dishwasher and unloading clean dishes after the cycle is complete.
  • Dishwashing Equipment Maintenance: Cleaning and maintaining the dishwasher and ensuring it operates smoothly.
  • Kitchen Cleanup: Assisting with general kitchen cleanup tasks, such as wiping down countertops and taking out trash.
  • Team Collaboration: Cooperating with kitchen staff and chefs to ensure a smooth flow of dishwashing operations.
  • Safety and Sanitation: Adhering to food safety and sanitation guidelines to maintain a clean and safe kitchen environment.
  • Dish Storage: Properly storing clean dishes and utensils in designated areas.
  • Inventory Management: Keeping track of dishwashing supplies and notifying management when supplies need replenishing.
  • Dishwashing Schedule: Following a schedule for regular dishwashing duties, especially during busy periods.
  • Compliance: Adhering to health and safety regulations and guidelines related to food service.
Education/Experience:

High school diploma or general education degree (GED); or one to three months related experience and/or training; or equivalent combination of education and experience.

Physical Demands:

Frequently stands, uses hands, talks, listens, tastes and smells. Regularly walks and reaches with hands and arms. Occasionally sits, climbs, balances, stoops, kneels, crouches, or crawls. Regularly lifts up to 50 pounds and occasionally lifts up to 100 pounds (team lift).

Environment/Noise:

Regularly works in extreme heat (non-weather) and near moving mechanical parts. Occasionally works in extreme cold (non-weather), wet or humid conditions (non-weather), near toxic or caustic chemicals, and in outdoor weather. Noise level is moderate.

Ability to read and speak English may be required in order to perform the duties of the job (e.g. the associates may be required to communicate with English speaking customers or co-workers, the manuals for the equipment the associates may use are in English).
