The Chef De Partie is responsible to run the main production kitchen independently with as little supervision as possible, supporting the Production Chef (Sauces, Entremetier, Fish, Roast, Veg, and Special order or BEOs).
The responsibilities include:
- Coordinate / supervise all personnel assigned to their section and distributing job allocation accordingly.
- Training and development of subordinates at his/her station.
- Undertake recipe reviews on a daily basis and / or if additionally requested by the Corporate Executive Chef / Chef de Cuisine / Sous Chef and/or Station Chef and maintain the recipe folders (Tablets containing all recipes and appearing in an immaculate condition) of the section.
- Prepare daily electronic food requisitions by counterchecking merchandise in Kitchen stores to maintenance to avoid overstocking and wastage of items.
- Control and monitor working hours of all personnel assigned to their section.
- They are responsible to fulfill any request within their area of responsibility received from the direct supervisor and / or manager on duty that may arise with short notice due to last minute special functions, or other unforeseen changes.
- They are responsible to communicate the status of their section in terms of food production, equipment, maintenance, performance of staff or any other topics related to the section to their immediate Supervisor / Chef de Cuisine / Corporate Executive Chef.
- Responsible for the quality and presentation of food during preparation and service hours.
- Responsible for the entire service line at their section during meal hours in terms of freshness, quality, and refilling of food items.
- Preparing food samples whenever the Production Chef deems necessary (show plates, tasting, recipe trials).
- Ensure proper storage of food items according to PH regulations in their area of responsibility.
- Must ensure that HACCP is applied accordingly.
- Fully responsible for the cleanliness of his/her work station (WIF, Table, Floor, Working Area, and adjacent areas) according to PH regulation, enforce "Clean as you go" working habits.
- Attend the daily Chefs Meeting to discuss forecast figures and the day-to-day operation/activities.
- Countercheck daily deliveries from the Storeroom for their accuracy, and report any discrepancies to their immediate supervisor.
- Must be familiar with the Kitchen layout in terms of safety and security, must have a full understanding of the Company's rules/regulations, and participate in all required Safety Drills / Training
The ideal candidate will have:
- Qualification from a culinary school.
- 3 years of experience working in a similar role.
- Excellent listening and communication skills.
- Knowledge of best practices for safety and sanitation.
- Passion for delivering great food and service.
- Multitasking and organizational ability.
