ASSISTANT MANAGER OF FOOD AND BEVERAGE


JOB TITLE: Assistant Manager of Food and Beverage

STATUS: Full-time

FLSA: Exempt


WORKING HOURS: This is a salaried, exempt position. The incumbent is expected to devote such time and energy as is reasonably necessary to perform the duties and responsibilities of the position. Position may require further availability evenings, weekends, holidays and special events.


SUMMARY: Responsible for ensuring fast, friendly and courteous service to every guest. This position is responsible for leadership, service, cleanliness, sanitation and control of Casino assets in the Food and Beverage Department.


ESSENTIAL DUTIES AND RESPONSIBILITIES:

  1. Schedules and monitors staff to ensure proper coverage during peak business hours and minimal staffing during off-peak times. Prepares staff schedules in accordance with determined productivity standards (i.e. hours worked, PTO request, sick leave, leaves etc.). Tracks time and attendance in accordance with policy, maintains attendance files and administers progressive disciplinary actions.
  2. Assures high customer satisfaction levels are maintained and resolves guest complaints.
  3. Responsible for training and supervision of all restaurant and beverage employees to departmental standards.
  4. Responsible for writing and administrating employee performance evaluation forms.
  5. Coordinates with Human Resources to adhere to recruiting, training and employee relation issues.
  6. In conjunction with the Manager of Food and Beverage Offers input towards the annual departmental budget process and tracks purchases to insure that the budget is not exceeded.
  7. Responsible for the ordering of all food/Beverage supplies for front of house. Tracks and orders liquors, wine, beverages and other bar supplies. Stocks and maintains organization of storeroom, and issues beverage. Accounts for spillage/waste.
  8. Ensures front of the house restaurant staff and bar staff meet both state and departmental requirements concerning sanitation and personal hygiene.
  9. Ensures that staff wears appropriate uniforms and appearance meets departmental standards.
  10. Assures all food and beverage outlets are clean, presentable and ready for guest during assigned shift and that all cleaning, side work duties and opening and closing procedures are followed.
  11. Verifies all assigned banks, receipts and deposits for all bartenders, servers and cashiers.
  12. Records and reports all cash variances per variance policy.
  13. Conducts random, month-end and year-end inventory
  14. Commits to the Team R.O.C.K. Philosophy.
  15. Commits to the Team R.O.C.K. "Leadership Pledge" and "Core Leadership Qualities".
  16. Meets the attendance guidelines of the job.
  17. Adheres to regulatory, department and company policies and procedures.
  18. Attends and conducts all required meetings and training.
  19. Maintains confidentiality at all times.
  20. Performs other duties as assigned.

SUPERVISORY RESPONSIBILITIES:

Front of the House and Bar Staff during scheduled shift


QUALIFICATIONS: To perform this job successfully, an individual must be able to perform each essential duties list above satisfactorily. The requirements listed below are representative of the knowledge, skill, and ability required.


  1. Minimum of three (3) years or bar, food service or retail experience required.
  2. Two (2) years prior supervisory experience in food and beverage setting highly desirable. Must be able to work independently.
  3. Knowledge of restaurant dining procedures, setup and service.
  4. Must be familiar with food and beverage products, terminology and ingredients.
  5. Must be ServSafe certified or be able to obtain a ServSafe certification within six (6) months of employment.
  6. Must pass Alcohol Awareness Training as offered by the Casino within the first thirty (30) days of employment.
  7. Must be able to work independently.
  8. Must be able to get along with co-workers and work as a team.
  9. Must present a professional appearance at all times.
  10. Must be able to maintain a high degree of confidentiality with respect to all matters pertaining to the gaming enterprise business.

EDUCATION:

  1. High School Diploma or equivalent GED preferred.

LANGUAGE SKILLS:

  1. Must be able to read, write, speak and understand English. Bilingual skills preferred.
  2. Excellent oral and written communication skills are important to the successful conduct of this position.
  3. Ability to write accurate, grammatically correct, polished reports and business correspondence.
  4. Must be able to speak with the public in a professional manner.

MATHEMATICAL SKILLS:

  1. Ability to add, subtract, multiply, and divide in all units of measure.

REASONING ABILITY:

  1. Ability to proactively streamline processes for company's return on investment.
  2. Ability to define problems, collects data, establish facts, and draw valid conclusions.
  3. Ability to interpret an extensive variety of instructions furnished in written, oral, diagram or schedule form.
  4. Ability to process detailed work and requests for information or assistance in a timely manner.
  5. Ability to apply regulatory and procedure doctrine, concepts, and policy to practical situations.

LICENSES, CERTIFICATES, REGISTRATIONS:

  1. Must possess a valid California Driver's License with a clean driving record.
  2. Must be able to obtain ServeSafe certification within six (6) months of employment.
  3. Must be able to obtain a gaming license from the Dry Creek Gaming Commission.

PHYSICAL DEMANDS:

  1. Must be able to sit and/or stand for extended periods of time.
  1. Must be able to lift and carry up to twenty five (25) pounds.
  2. Must be able to respond to visual and audio cues.
