**Sodexo** campus services is seeking an experienced **Executive Chef 2** for **Maine Maritime Academy** located in Castine, ME. The Executive Chef will have responsibility for all culinary operations at the Academy, including all phases of residential dining, retail food service and catering food production. The role may require the candidate to go on the ship for 70 days and be EC on ship for students. This is optional but prefers someone to open to it, there will beadditional compensation for sea days!Get to travel and see different ports!Last cruise they went to the Carolinas, Florida, the Azores and Iceland.
The ideal candidate will have:
Executive Chef/Chef leadership experience working in a college/university food service environment;
Experience managing catering culinary operations & high-end Presidential / VIP / catering events;
Experience with food & labor management systems;
Experience building, leading and **training a dynamic and diverse culinary staff**
Ability to manage multiple and often conflicting priorities;
Great client relations and show a desire to be invested in the surrounding community.
Maintains customer satisfaction and good public relations.
**Position Summary**
Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
Key Duties
- Implements & coordinates the culinary function.
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
- Manages food & physical safety programs.
**Qualifications & Requirements**
Basic Education Requirement - Associate's Degree or equivalent experience
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
