What are the responsibilities and job description for the Pasta Maker position at Tortello?
Tortello is an Italian-owned, family-run pasta shop & restaurant rooted in artisanal craft, simple high quality ingredients, and the rituals of Italy. A 2022 & 2023 Michelin Bib Gourmand winner and Wicker Park neighborhood gem, we are looking for truly passionate artisans to join our team. Fresh handmade pasta is the spotlight of Tortello, with the best station in the restaurant - our front window. You will be trained to be an expert in this craft using the very best flour in the city, local farm eggs fed well to produce the deep orange yolks of Italy, and top level hand-crafted pasta tools. Working for a small, independent, Italian-owned restaurant, you'll have a voice within the Tortello family. Because we value the craft of our business so much, we share tips equally across the front & back of house. Our pasta is now available in grocery stores across the Chicago area, but our sfoglini (pasta makers) sit at the heart of the Tortello experience.

As part of our sfoglini (pasta-maker) team, you will be required to:
- Prepare pasta dough from scratch
- Follow proper techniques for different pasta shapes
- Produce daily pars efficiently
- Collaborate with chef on specials
- Collaborate with Owner and/or AGM on holiday pasta features
- Perform basic math and measuring skills
- Support as Line Cook on occasion
- Maintain a clean and sanitary food production area according to Department of Health standards
- Engage with guests through the window and seated at our pasta bar
- Strong work ethic, communication and time management skills
- Positive, proactive problem-solving. A strong focus on solutions vs problems.
- Engaging energy and passion - you are center stage in our front window with hundreds of people passing by every day and a pasta counter seating area watching you work

- Ability to exert well-paced mobility for up to 8 hours and lift up to 50 lbs.
- 2 years of pasta, bread, or pastry experience, fresh pasta experience is a plus
