Job Summary:
The primary purpose of this position is to provide leadership for kitchen operations with an emphasis on planning, training, and management of culinary activities in the kitchen. The Production Chef assumes targeted responsibility for inventory, quality control of food production and menu planning.

Job Requirements:
- High school diploma or GED.
- A Bachelor’s degree or related culinary degree or certification is preferred.
- Minimum of two (2) years’ industry experience at the level of a supervisor or manager.
- Must have knowledge of federal and state regulations governing nutrition practice and leadership.
- Certification in food handling (ServeSafe or equivalent).
- Ability to manage in a diverse environment with focus on customer services.
- Excellent planning, organizing and time management skills.
- Commitment to leading kitchen staff in delivering quality culinary dishes.
- Strong oral and written communication skills with a coaching-supervision style of managing.
- Basic computer skills including Microsoft Word and Excel.
- Ability to work independently, with limited supervision.
Responsibilities:
Provides the highest quality of food service to customers at all times while ensuring safe, sanitary and efficient practices supporting professional standards of dining and nutrition services for TW residents.
Supervises the day-to-day culinary food production system to ensure quality and timely deliver to customers.
- Ensures all kitchen staff adheres to food safety standards.
- Supervisor of Main Kitchen Culinary staff; plans and directs food preparation in kitchen, relays orders to line cooks, and ensures all members of kitchen staff deliver quality dishes under set deadlines.
- Collaborates with the Director of Dining Services and Executive Chef to establish goals, control food costs, and develop menus in order to help ensure the Dining Services Department attains its financial goals.
- Creates recipes, menus, and new designs.
- Evaluates and solves problems, such as the need to substitute items on menus, reusing cooked food and reducing excess waste and spoilage.

- Promotes safety and sanitation; inspects kitchen and production areas for cleanliness; maintains sanitation and safe food handling by establishing and maintaining safe practices in the kitchen regarding the operation of equipment. Is responsible for compliance with waste disposal and recycling policies.

Administrative Functions
Performs a variety of administrative tasks necessary to maintain accurate records for the department in accordance with State and Federal regulations.
- Helps to ensure the Dining Services Department attains its financial goals.
- Assures regulatory compliance by encouraging appropriate record keeping and charting and by maintaining appropriate files to document compliance.
- Carefully reviews each period-end reports and takes timely, appropriate action to address any problems that emerge from them.
- Monitors and audits accounting and financial control processes within the Dining Services Department.
- Maintains information on inventories and food costs and is responsible for such record keeping as production sheets, etc. on a monthly basis.
- Prepares requisitions for food, equipment and supplies.
- Attends monthly Food Service committee meetings.
- Coordinates Chef’s monthly meet and greets with the Dining Services Executive Chef.
