About the Opportunity:
Southern Cross Hospitality is about to embark on a significant period of growth with a number of new venues opening in the next 6-12 months and to facilitate this we are on the look-out for a Japanese Cuisine Executive Chef to join our team.
Reporting to the Head of Culinary, The Executive Chef will lead a talented team and ensure the kitchen operates to optimum efficiency.
The Ideal Candidate:
- Demonstrated experience as either a Executive Chef, Executive Sous or Head Chef in a high-volume kitchen environment
- Extensive Japanese culinary knowledge and experience
- Experience creating and costing menus
- Track record of leading teams that deliver outcomes
- Ability to manage staff performance, including unsatisfactory performance
- Display exemplary leadership and passion for global cuisine trends
- Understanding of financial budgets, food and labour costs
- Experience in managing and maintaining food safety program including documentation
- Rostering and ordering experience
- Monitor and supervise OSHA standards and procedure
- Ability to build and maintain effective relationships
- Outstanding time management
- Calm and composed demeanour
- Qualification in Commercial Cookery or equivalent
