Title: Bar Manager
Property: Wax Myrtle’s Club & Pool - Thompson Austin
Reports to: Assistant General Manager, General Manager, Chicago-based Beverage Director, LSD Directors & Partners
Position Objective: The Beverage Director is responsible for preparing for and executing all beverage service floor-wide. The ideal candidate has tenured experience managing people, as well as: ordering, inventory, cost management, staff training protocols, menu development as well as maintaining consistency/adherence to an established menu. The Wax Myrtle’s Beverage Director takes the lead on Wine, Beer & N/A menu decisions, as well as coordinating product for Public & Private Events; while building and maintaining a close relationship with our Chicago-based Beverage Director for all cocktail & spirit menu development.
Essential Duties and Responsibilities*
Development of Beverage Program
- Plan meetings with vendors to keep the program current and evolving
- Schedule and coordinate guest sommeliers, bartenders, distillers, brewers for programming opportunity, staff education, and venue promotion
- Work closely with Chicago-based Beverage Director who maintains final decision on what new products we bring in
- Responsible for keeping Spirit, Beer, Wine & N/A menus current and priced appropriately
- Recruit, Hire & Train a Bar Manager / Lead Bartender for delegation and oversight
Inventory Control
- Assess and correct any potential inconsistency or issues relating to inventory
- Oversee communication of 86’d and low inventory items and determine “pivots”
- Oversee and schedule inventory process for NA Bev, beer, wine, and liquor
- Oversee all invoicing is timely and accurate
- Responsible for ensuring inventory levels meet the needs of the business
- Set standards for beverage storage and back bar organization
Monitor Purchasing / Sourcing
- Manage spending in comparison to budget/forecast
- Place beverage orders as necessary
- Oversee the coordination of incoming product with staff/managers
- Oversee beverage purchasing and report to ownership/directors on spending
Quality Control
- Ensure proper par levels of juices, syrups, garnishes
- Ensure quality control of syrups and garnish
- Ensure accuracy of batched recipes and cocktail recipe resources
Training
- Develop and execute training paths for all incoming bar positions
- Develop and execute education procedures for beer, wine, N/A, spirits and cocktails, including reeducation of current staff as needed
- Work alongside bar team to spot check recipes; pour measurements, efficiency, hospitality, speed and cleanliness of all bar & beverage areas
- Inform and develop weekly and ongoing spirit, wine, etc. education for staff with GM
- Serve as a mentor for all bar staff & FOH staff overall; meet regularly with staff and help them develop the skills to move up
