DESCRIPTION OF MAJOR JOB DUTIES
Employees in this class supervise Cooks and Food Service Workers in food preparation, food rethermalization, kitchen cleaning, proper serving utensils and proper storage of food/non-food items. To supervise and direct subordinate personnel in daily operation of a Jail Food Services which includes but is not limited to the timely meal service of portion/temperature controlled meals to multiple locations, labor accountability, providing instructions in sanitation and safety, maintaining quality control, and timely reporting of required documentation. Responsible for making work assignments, reviewing completed work, reviewing menus and inventories, and procuring/dispensing in an accountable manner all food and other supplies.
QUALIFICATIONS
A Bachelor's Degree from a recognized college or university with a major in Hotel/Restaurant Management or related field; OR
An Associate's Degree from a recognized college or university with a major in Hotel/Restaurant Management or related field; AND
Two (2) years of full-time paid food services experience; OR
Five (5) years of full-time paid food service experience including two (2) years management/supervisory experience in an institutional cafeteria setting i.e., military, hospital, dormitory, etc., cooking kitchen and food sanitation, monitoring finishing food products to ensure proper portion control, quality and temperature.
