JOB SUMMARY:

The Pastry Chef will oversee the all back of house baked goods, pastry production and execution for the property including the buffet quick service restaurants with support all venues. In addition the Pastry Chef will support all pastry, cake making, garde manger production as demanded by business for all banquets, restaurants, buffet and quick serve restaurants at the casino resort. With support of the banquet team, the Pastry Chef is responsible for resort amenity execution and creation and must maintain a 4 diamond standard for all amenities. Under the direction of the Executive Sous Chef, the Pastry Chef will be responsible for seasonal menu rotations and competitive set analysis. Daily, the Pastry Chef will oversee buffet and quick serve restaurant production to ensure maximum efficiency in recipe consistency, food costing, and scheduling of all back of house pastry and prep team members. The Pastry Chef will also oversee all seasonal pastry production, themed decorative items for the buffet with chocolate or sugar work. We will demonstrate and promote our We-Ko-Pa-Way Service Culture at all times.

EDUCATION AND/OR EXPERIENCE:

Minimum requirement of 3 years’ experience as Pastry Chef in a high volume operation. This candidate must be highly skilled in overall pastry kitchen operations and menu planning. Must have experience in high volume multi-unit operations. 4-5 Diamond resort and/or casino experience preferred. Culinary degree preferred.

REQUIREMENTS/DUTIES:

  • Provides exceptional guest service to both external and internal guests by maintaining and exhibiting the Casino Resort We-Ko-Pa Way Service Standards: Smile and Greet, Name and Meet, Thank you and Goodbye
  • Accountable to all standards set forth in the We-Ko-Pa Way Casino Resort service guide.
  • Under the supervision of the Executive Sous Chef manages costs, innovative and on-trend pastry and menu development, plate presentations, production, stewarding and staffing for the buffet, quick service areas, banquets, fine dining and other outlets as required by business demands.
  • Responsible for the pastry department of the We Ko Pa Casino Resort.
  • Maintains culinary training for all baked goods, garde manger and pastry production initiatives to ensure all of the culinary team is skilled in food safety, sanitation and cooking procedures. This also includes and is not limited to the use and care of the steel, the use of knives and other culinary tools. Keeps safety and sanitation uppermost in mind.
  • New restaurant or resort opening experience highly preferred.
  • Will support all efforts of the Fine Dining Restaurant Pastry Chef with plated dessert menu development, execution and production as needed by business demands.
  • Responsible to execute resort amenities with support of the banquet department for all sales and VIP amenities both sweet and savory.
  • Must be compliant with all state health regulations and maintain optimum efficiency in food safety and sanitation practices. Must ensure all proper labeling and storage of food while controlling waste. Must be in compliance on all IHS health inspections
  • Teaches the art of cake making, baking, pastry, chocolate and sugar work along with basic cooking fundamentals in each of the areas supervised.
  • Oversees back of house pastry and prep cooks and leads departmental food preparation of the assigned area of responsibility as required by production sheets.
  • Is responsible for the efficiency and presentation of all pastry and bread service lines to ensure a 4 diamond experience. This requires the oversight and implementation of standard operating procedures, menu spec books, recipes and build-sheets for all outlets including but not limited to: portion control, plate appearance, and proper food preparation.
  • Ensures training of all pastry cooks the importance of sanitation, cleaning, and safety. Ensures all employees to “clean as they go”.
  • Contributes to a team effort and accomplishes related results as required.
  • Candidate is required to take a culinary practical.
  • Must have valid food handler’s permit and be Serve Safe certified.
  • Must have valid title 4 training and liquor management training.
  • Performs other related duties as required.
  • Must be able to lift in excess to 50 pounds and push or pull 100.
  • Must be able to obtain and maintain State/Tribal License (including extensive background check).
  • Must pass pre-employment drug test.

While performing the duties of this job, the employee is required to:

  • Bend, reach, stand, walk for 34-66% of work day.

  • Exposed to hot/cold temperatures for 34-66% of work day.
  • Exposed to dust for 1-33% of work day.
  • Sit for 1-33% of work day.
  • Must be able to obtain and maintain State/Tribal License (including extensive background check).
  • While working on casino floor, employee is exposed to high levels of noise daily

Pay: From $65,000.00 per year
