Position Overview :
Objective : Support Winner Hospitality’s pastry team by focusing on laminated pastry production, ensuring consistent quality and precision in preparing pastries like croissants, Danish, and other laminated products.
Responsibilities :
As a part-time Pastry Cook specializing in lamination, you’ll contribute to daily production by preparing laminated doughs with care and attention to detail.
Your work will involve precise dough handling, rolling, folding, and shaping to achieve the ideal texture, flavor, and presentation for each product.
You will work closely with the pastry team to meet production goals, maintain cleanliness, and uphold Winner’s high standards for quality.
Location : 194 5th Avenue, Brooklyn NY 11217
Schedule : Part-Time : Thursday, Friday, Saturday mornings 8 am - 3 pm
Compensation : $20 - $22 per hour
Reports to : Head Pastry Chef
Key Responsibilities :
Pastry Lamination & Production
- Assist in daily production of laminated pastries, including preparing dough, rolling, folding, and shaping products such as croissants, Danish, and puff pastries.
- Monitor dough temperature, butter consistency, and other factors crucial to high-quality lamination.
- Execute precise portioning and shaping, adhering to recipes and portion sizes for consistent results.
Quality Control & Presentation
- Ensure that pastries meet Winner’s standards for flavor, texture, and presentation.
- Actively participate in taste tests, providing feedback and ensuring consistency across batches.
- Minimize waste by adhering to exact measurements and following recipes accurately.
Cleanliness & Organization
- Maintain a clean and organized workstation, following sanitation protocols and keeping the production area in line with health and safety standards.
- Ensure that all equipment used in lamination is cleaned, stored properly, and in good working order.
- Assist in managing ingredient stock for laminated pastry production, including putting away inventory, conducting inventory checks, and notifying the team of supply needs.
