In 1982 Gina and Mike Cox opened the Homemade Ice Cream and Pie Kitchen as a lunch counter at 2525 Bardstown Road, in what was formerly an old Cheverolet dealership, then converted to a small neighborhood center on the outer edge of the historic Highlands district in Louisville. Everyday they would serve lunch and meals from the lunch counter, baking was a small part of the business. They started making one or two pies a day. The smell overwhelmed the lunch counter and soon they became well known for fresh baked pies. The pies became so popular that the lunch counter was changed over to make way for a pie case, which was soon followed by an ice cream case. Soon thereafter they purchased an ice cream machine in order to follow in the tradition of making everything from scratch. Quickly that grew to include fresh baked cakes, cookies, and many other old fashion desserts, like meringue pies, strawberry rhubarb, peach and pumpkin pies. They served old fashioned malts, sundaes and many more truly great traditional desserts. In 2005 Adam and Mary Lee Burckle, who have been in the baking business since 1983, purchased the Homemade Ice Cream and Pie Kitchen. A year later they opened another neighborhood store based on customer requests. The recipes were handed down and, still to this day, we scratch make and bake all of our desserts and fresh churn all of our ice cream. The Pie Kitchen, as most people refer to it, has grown to over 150 employees and ten neighborhood stores. Adam and Mary Lee run the stores daily as well own all of the stores. It is a family business down to the true sense of the words. At the Homemade Ice Cream and Pie Kitchen we fresh churn our own ice cream and bake all of our over 100+ desserts. From ice creams to pies, cakes, cookies, upside down cupcakes and more. If we sell it we make it fresh!
