    • 3 years minimum as a head sushi chef and comprehensive experience with upscale omakase concepts
    • 4-6 years in high-end restaurants / luxury hotels
    • excels in seafood fabrication, rice preparation, and knife skills
    Responsibilities
    • oversee the sushi program for one area and product production for additional outlets such as In Room Dining, Banquets, Pop Up Events, etc.
    • Actively participate in training, evaluating, leading, motivating, coaching, and counseling all employees on the culinary team to ensure that established cultural and core standards are met.
    • Provide long-range strategic planning for the team. In addition, reviews and improves recruitment and retention strategy for the Kitchen. Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
