Hollywood Casino Kansas Speedway is currently looking for a Executive Chef to join the team.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Provide friendly, fast, and helpful customer service, through the consistent practice and delivery of ACES Customer Service to all guests and team members.
- Maintain budgeted food and labor costs.
- Responsible for menu development and design as well as new food ideas.
- Demonstrate a commitment to freshly prepared foods and superior food quality.
- Maintain proper storage and rotation of all food items.
- Provide training and direction to develop Demi, Sous, and Room Chefs.
- Oversee the training of all Culinary Team Members.
- Maintain proper sanitation levels throughout all food and beverage areas.
- Conduct food cuttings on new products.
- Responsible for the management of all kitchen functions.
- Responsible for the development and use of Recipes for all food items.
- Ensure proper employee morale to promote development and long term retention.
- Oversee the scheduling of all kitchen personnel to ensure proper coverage including bidding.
- Assist leadership with special and routine projects as necessary. Provide pertinent and timely feedback to leadership on matters of concern.
- Educate all employees as to the proper procedures of food preparation, cleanup.
- Review, adjust and administer working schedules of team members.
- Assign and apportion work to be done among team members.
- Review work processes and determine effective techniques or processes to be used by team members in the course of business.
- Supervise and manage the work processes or procedures of team members.
- Conduct individual or group pre-shift meetings with team members and provide daily positive feedback.
- Understand and adhere to disciplinary policies including but not limited to counseling team members and the use of progressive discipline to modify poor performance.
- Administration of disciplinary action including but not limited to warnings, suspensions and recommendations of termination.
- Address and manage complaints, grievances or concerns from team members.
- Effectively use, administer and manage rewards and recognition for front line team members.
- Review the performance, productivity and efficiency of team members including but not limited to periodic evaluations.
- Recommend or oppose the change in status of team members including but not limited to changes from full time to part time, promotions, and transfers.
- Provide for the safety of team members, including keeping areas clean and free of safety hazards, debris and litter and performing all job duties in a safe and responsible manner.
- Meet department uniform, appearance and grooming requirements. This includes purchasing and wearing slip resistant safety shoes when performing all job duties.
- Perform other job related and compatible duties as assigned.
- Understand and adhere to bargaining unit agreements.
- Must adhere to regulatory, department and company policies.
- Perform all job duties in a safe and responsible manner.

QUALIFICATION REQUIREMENTS

- Bachelor’s degree from an accredited four-year college or university; or equivalent combination of education and experience.10 years progressively more challenging experience in a large volume, high quality food establishment.
- Excellent interpersonal, communication, coaching, team building and problem solving skills are required
- Experience in motivating staff through appropriate incentive programs and training
- Knowledge of menu planning, soups, sauces, meat, poultry and seafood items is required
- Knowledge of Food & Labor costs
- Proven problem solving and critical thinking skills required
- Ability to earn and maintain ServSafe certification
- Ability to meet deadlines and effectively manage multiple priorities in a demanding work environment
- Ability to maintain health department standards and regulations

STARTING SALARY
Starting from $80,000.00 annually, based on experience
