Field & Fire Café is seeking a creative, yet systems driven Pastry Manager for our pastry department. Join a team that cares about making the highest quality products. Work with regional, organic flours and local produce from Michigan farms. Everything in our bakery is handmade from scratch from start to finish. We are looking for an independent, self-starter who has attention to detail, vision, drive and a strong work ethic. This position comes with freedom to develop new items and grow the business.
This is a salaried, 40-hour week position, with longer hours required during the holiday season. Pay is commensurate with experience. Weekend hours required. This is a very early morning shift, generally 2am-10am.
Job Duties and Qualifications:

• Produce croissants, muffins, scones, cookies, bars etc. according to pre-written recipes.
• Manage wholesale production numbers.
• Develop consistently high-quality baked goods.
• Create specialty cakes and desserts for birthdays and special events.
• Work with management on recipe research and development for new/seasonal pastry items and cost out all new recipes.
• Lead and train our pastry team on proper techniques
• Assist with orders for food items needed to meet production; and non-food items, such as packaging.

• Minimum 1 year management experience
• 2 years at a commercial bakery required
• Experience working with laminated dough required.
• Experience making gluten-free and vegan pastries highly desirable.
• Proficient with Microsoft Excel
• Independent, ‘can do’ work attitude
• Ability to lift 50lb bags of flour
• Basic knowledge of commercial bakery ovens, mixers, scales, health codes and safety procedures
