About Us
The Molak Corporation is a family owned and operated restaurant and entertainment group, established in 1975 and recognized for owning some of the hottest joints in Texas: Gruene Hall, the Gristmill and Josephine Street, to name a few. We have grown from two employees and one business to what you see today, 10 businesses and over 600 employees between Gruene and San Antonio. In the heart of San Antonio’s vibrant Pearl District, Down On Grayson is a casual modern-American dining spot nestled in Tobin Hill just steps from the Pearl. Refined but not pretentious, our menu offers chic updates on old favorites like crispy Brussels and a butter-topped Filet.

Our indoor dining room is a beautifully bright space with plenty of floor-to-ceiling windows. Often voted the best in town, our dog-friendly outdoor patio is one of the area’s largest, most Instagrammed patios, known for our signature black and white umbrellas.

What we are looking for
We are currently looking for a General Manager to be the face of Down on Grayson and oversee Front and Back of House operations to ensure we continue to consistently provide the excellent food and service we have become known for. The GM is responsible for driving operational excellence through the development and management of effective operating standards, encompassing food quality and presentation, inventory management and cost, customer service, safety, training, and efficiency. In addition, The GM will be responsible for managing and coaching the performance of all staff and motivating and inspiring them to deliver excellent customer experiences.

What you will be doing
  • Manage the entire operations of Down on Grayson focusing on cost controls, profitability, food quality and presentation, inventory management, customer service, safety and training
  • Manage the development and performance of staff, including scheduling, coaching, training, and discipline, and identifies staff members who have the potential to grow within our operation and works to develop them for the purpose of placing them in future management roles
  • Ensure compliance with safety, sanitation, food handling, liquor laws, and responsible alcohol service guidelines
  • Ensures the operation is properly staffed with the right people and works in conjunction with HR and the management team to interview and hire according to our culture standards
  • Responds swiftly to customer concerns or complaints and resolves them in a timely and efficient manner, resulting in a positive customer experience
  • Identifies strategic ways to increase customer traffic, customer retention, and profitability by suggesting and creating new drinks, food items, and specials in conjunction with the marketing team
  • Work collaboratively with other establishment managers, safety, training and human resources in the performance of all people management responsibilities

What you bring
  • 4 – 7 years of restaurant management experience, preferably in a scratch kitchen
  • Experience forecasting sales and labor
  • Experience with profit and Loss statements and be able to explain them in greater detail to key stakeholders
  • Experience using a POS such as Aloha and Restaurant 365 (preferred)
  • Experience with interviewing and hiring hourly staff
  • Experience with inventory control
  • Food Handlers, TABC and Food Manager Certifications
  • The ability to work variable full time hours ranging from 50-55 hours per week including weekends, holidays, open and close shifts.
  • The ability to lift and carry up to 20 pounds
  • Working knowledge of all federal, state, and local laws as it pertains to the restaurant industry
  • Proven willingness and enthusiasm to embrace personal performance development coaching and instilling the same to develop employees, control costs, and provide outstanding guest experiences
  • Effective communication as all levels of the organization
  • A self-starter with a positive and hospitality-driven, people-centric focus
  • An effective leader with the capacity to maintain control in high-pressure situations.
