Pavilion Restaurant located in Wolfeboro, NH, is seeking a passionate and motivated Chef De Cuisine to oversee daily kitchen operations.
The Chef De Cuisine’s main responsibility is to manage and oversee kitchen operations through organizing, directing and administration oversight in efforts to generate profits while maintaining standards set by the company. Our guest’s satisfaction is one of our main priorities. We have been able to raise the bar in the area and we need to remain consistent. The focus needs to be the thoughtful menu planning and execution on our farm to table – new American cuisine. The importance on the presentation of the food is just as important as the flavors developed.
The Chef De Cuisine must demonstrate culinary talents by effectively planning menus and develop recipes while performing tasks that assist in leading the staff and managing all food related functions to ensure consistency and maintain standards.
Responsibilities:
- Work with the executive chef to conceptualize and present menu options and specials based on seasonal changes while utilizing excess product and keeping costs in mind
- Assist with the preparation and planning of menus and events
- Ensure that kitchen activities operate in a timely manner.
- Resolve customer problems through effective communication with the FOH staff.
- Monitor and record inventory each month
- Be aware of all financial budgets and goals
- Act as support to kitchen staff with various tasks including daily food preparation, cooking on the line and plate presentation.
- Ensure guests are receiving an exceptional dining experience set by our standards which represents an accurate value for the money they are spending.
- Train new kitchen members to meet restaurant standards.
- Follow all health code requirements set by the state and implement sanitation and safety guidelines.
- Effectively manage the kitchen staff
- Daily Ordering and receiving product needed for food preparation
- Maintaining organized food and dry goods storage area
- Keep the kitchen clean and keep track of all deep cleaning schedules
- Execution of food preparation and service when scheduled for a station shift
- Ensure all food items are prepared to the specs as stated in the recipe while controlling portion sizes and minimizing waste.
- Ensure that all equipment is being used safely and correctly and that it is kept clean and maintained.
- Ensure that the overall operational budgets are strictly followed.
- Work closely with the front of the house management team to constantly improve employee dynamics and flow of service.
- Act with a positive and motivated attitude with all associates.
- Ensure that weekly schedules and requested days off are filed correctly.
- Ensure that the culinary team is motivated and that positive feedback on work performance is given.
- Delegate responsibilities to members of the kitchen staff as required.
- Mentor and counsel employees in accordance with Company policy.
- To recruit and train an appropriate culinary team who are able to work well within a team and follow guideline set by the company
