The Raven Café in Prescott, AZ is looking for a passionate, creative, focused and organized individual to lead our culinary program as Chef. Located in the historic downtown Prescott, Arizona, the Raven Café aims to serve our community as a gathering place for all, featuring a full, all-organic espresso bar and a wide variety of craft beers and wines. Our innovative menu is created with a focus on organic ingredients, many of which come from local sources. Our relaxing and comfortable environment is decorated with rotating art shows by local and regional visual artists, and on the weekends, we line up the best in up-and-coming local music. We try to make every aspect of our business earth-friendly from the ground up, and will continue to accept our part as an environmentally conscious establishment.

The Chef is responsible for all aspects of leading and managing the culinary program and culinary team, ensuring quality, consistency, creativity, costs, and sanitation/health standards are maintained at all times.

Responsibilities:

  • Ensuring quality and consistency of all menu items and adaptability to special dietary needs.
  • Maintaining food cost, labor, and operating expenses within budgeted guidelines while maintaining quality standards.
  • Developing new menu items and specials, rotating menu selections seasonally.
  • Stay up to date on culinary trends.
  • Develop relationships with local farmers, ranchers, and suppliers.
  • Ensuring portion sizes, presentation, and preparation techniques are consistent.
  • Oversee and assure proper food handling procedures at all times.
  • Following proper costing and pricing methods.
  • Hiring and human resource management for all kitchen team members, including appraisals, disciplinary actions, and termination decisions.
  • Training, coaching, and developing kitchen team members.
  • Setting and ensuring performance standards for kitchen team members.
  • Preparing weekly schedules to ensure proper staffing for forecasted business levels while adhering to budgeted guidelines.
  • Following proper purchasing, receiving, and storage standards and procedures.
  • Build relationships with customers through regular and genuine engagement.
  • Ensure all equipment is kept clean and in excellent working condition.
  • Maintain cleanliness, sanitation, and safety standards to the highest levels.
  • Follow all procedures to ensure proper holding and storage temperatures for all food products.
  • Maintain appropriate inventory levels, ensuring product rotation and nominal waste/loss.
  • Oversee and prepare monthly inventory counts.
  • Plan and maintain service schedules for hood cleaning, grease trap service, and any other equipment service/cleaning schedules.
  • Maintain a positive and professional demeanor with staff and customers.

Requirements:

  • 4 years of proven kitchen management experience
  • 2 years of culinary education preferred
  • Proven track record of maintaining COGS, labor, and operating expenses within budget
  • Able to meet deadlines
  • Self-starter with strong initiative and organizational skills
  • Excellent communication skills, both verbal and written, with supervisor, peers, staff, customer, and vendors
  • Able to reach, bend, stoop and lift up to 50 lbs.
  • Able to work in a standing position for long periods of time
  • Must have, or obtain within 30 days, food safety management certificate
  • Ability to recognize and resolve issues quickly
  • Capable of delegating tasks and ensuring they are completed appropriately
  • Working knowledge of various computer software including Word, Excel, POS front and back office programs, social media platforms, and tools for team communication and scheduling.
  • Able to handle multiple tasks at once
  • Up to date knowledge of food industry and trends
  • Impeccable time management skills
