Perth Racing (the trading name of the Western Australian Turf Club) is the premier thoroughbred racing club in WA, operating both Ascot and Belmont Park racecourses. The role:
We are looking for a talented, qualified Chef who thrives in a fast paced, team environment to join our Kitchen Team. Reporting to the Executive Chef, you will be responsible for preparing, cooking and presenting food to the highest standards for various venues across Ascot and Belmont Park racecourses. You must have the ability to inspire and motivate others as you will be involved in the supervision, coordination, and training of other kitchen staff to ensure professional food service.
Your responsibilities will be but not limited to:
1. Prepare, portion and cook food by the appropriate method and as directed to ensure the highest quality
preparations utilising the available ingredients and equipment
2. Perform and demonstrate general or specialised cooking, techniques, ie butchering, baking or pastry cooking duties
3. Supervision and coordination of other kitchen employees and quality of dishes, including preparation and presentation
4. Coordination with Food & Beverage staff and Managers to execute operations
5. Managing dietary requirements of guests, including discussing with managers, kitchen and wait staff
6. Ensure those under supervision follow food safety guidelines and Perth Racing policies & procedures
7. Serve food for the restaurant or function venue as required, ensuring a high standard of presentation.
8. Clean food preparation areas and equipment
9. Monitor standards of hygiene and food handling within the kitchens and outlets to ensure that all legislative guidelines are at least met and exceeded when practical
10. Ensure compliance with all relevant OHS guidelines and internal policy’s
11. Assist with menu planning, as required
12. Assist in training and development of kitchen staff and apprentices
13. Comply with any reporting and administrative function required of the position
To be successful in this role you will have:
· Completed an apprenticeship or passed the appropriate trade test
· Certificate III in Commercial Cookery and relevant work experience
· Experience in the event/conference/restaurant industry and/or a background within a food & beverage environment is essential
· Experience in maintaining a safe and hygienic kitchen environment
· Knowledge of kitchen and food & beverage operations
· Knowledge of hygiene regulations for food areas and equipment
· Knowledge of current dinning trends
· Strong interpersonal/communication and organisational skills
· The ability to maximise the use of resources and adhere to budgetary requirements.
Perth Racing Offering:
An annual salary of $73,150 plus super will be on offer to the right candidate based on skills and experience.
