· Ensuring that all food is of excellent quality and served in a timely manner.
· Planning the menu, keeping in mind budget, and availability of seasonal ingredients.
· Overseeing all kitchen operations.
· Coordinating kitchen staff, and assisting them as required.
· Training staff to prepare and cook all the menu items.
· Taking stock of ingredients and equipment, and placing orders to replenish stock.
· Enforcing safety and sanitation standards in the kitchen.
· Creating new recipes to keep the menu fresh.
· Keeping up to date with industry trends.
· Receiving feedback and making improvements where necessary.
Ordering:
· Coordinate with all production departments; you will have to coordinate with purchase/order Personal & have them place orders for required stock
· Check stocks every morning and evening.
· Maintain FIFO
· Manage and reduce wastage
· Inspect all food purchase on arrival.
· Accept or reject orders stock if it doesn't meet the required freshness or have the highest quality.
· Make sure all accepted purchases are either processed/ washed & portioned as required before being stored in the kitchen/ fridges/ storage area.
· Overlook and manage all departments.
· Menu Knowledge
· Maintaining quality, hygiene and consistency of all food production.
