Position Summary:
The Chef is responsible for all aspects of culinary operations in the back of the house. Ensure consistent high-quality food is served. Must be able to intermingle and accommodate the Corporate Executives and Executive Assistants with menu planning. This position is responsible for the creation of menus for the Cafeteria, Executive and Corporate Fleet Catering functions. Must assure that high levels of sanitation and safety are met. Chef’s position requires immediate knowledge of cooking principals and visible supervisory skills.
Main Responsibilities:
- Provides direction and training to culinary team as well as cross-training of other foodservice employees.
- Communicate with multiple vendors to ensure ordering of menu driven and specialty items to fulfill daily menu and special catering events.
- Educating and practicing proper safety and sanitation.
- Must have knowledge of cost and quality controls and be able to solve related issues.
- Oversees all cooking procedures, finished product and portion control.
- Strives for continuous culinary improvement initiatives focused on exceeding out catering guest expectations.
- Ability to lead operation in management absence.
- Similar to the Chef position but performed at more of a mastery level.
- The following are examples of the requirements at AP6D that exceed the normal scope of responsibilities.
- Requests for Executive and VIP venues in the AP6D Unit are comparable to services offered at upscale worldwide hotels.
- The fulfillment of special venues and unusual request requires extensive networking with creative network, grounds, maintenance, security, housekeeping, movers, conference services and audiovisual and to ensure all aspects of the event are executed seamlessly.
- Requested to obtain special equipment, customized disposables while specifying cooking preparations to accommodate corporate fleet cuisine.
- Assist clients in planning and/or customizing high profile executive events.
- These events frequently have themes or requirements that are unique and time consuming.
- Continual resourcing with vendors is required to find and obtain special services and products to meet these requests.
- Benchmarking our services with that of the ever-changing competitive hospitality industry.
- Staying current with trends in order to fulfill our high-profile client requests.
- This includes the continual creation of new high-end special menus for the executive suites and VIP clients.
- Research and creation of International menu options to accommodate VIP’s and guests from around the world
Qualifications:
- High School Diploma is required, Culinary Degree preferred.
