Immediate Opening for Dietary Supervisor. Full Time position.
POSITION SUMMARY
This position must provide supervision for the Dietary Department, ensuring quality food. The Dietary Supervisor will direct and assist the preparation and serving of regular meals and therapeutic diets, order food and supplies and maintain area and equipment in sanitary condition, and assure the smooth operation with other hospital departments.
POSITION QUALIFICATIONS
* Ability to read, write, and speak English and to write and follow oral and written directions.
* Good physical health and proper personal hygiene.
* Ability to prepare tasteful meals and to cook a variety of goods in large quantities.
* Ability to follow prepares menus and portion control guides.
* Ability to schedule, supervises, and govern all dietary staff.
* Ability to work in cooperation and harmony with personnel in all departments.
* Ability to schedule production so as to correlate meals with other hospital functions.
* Ability to educate and train staff how to properly prepare and serve food and how to keep kitchen clean and sanitary.
* The dietary supervisor may also cook.
* Experience as a head cook in a hospital or skilled nursing facility is preferred.
* Other instructional experience is preferred.
* Other duties as assigned
DUTIES/ RESPONSIBILITIES
* The supervisor will confer regularly with the RD, Director of Food and Nutritional Services, Director of Clinical Nutritional Services, and Director of Nursing keep them informed of both the problems and progress of the Dietary Department.
* Schedule and supervise the Dietary Staff providing in-service training. Assure all dietary staff is oriented per policy form.
* Is responsible for the preparation and service of all food and ensures that approved menus and accompanying recipes are followed.
* Plan kitchen procedure to have food ready on time, serving hot food hot and cold foods cold.
* Test cooked food by taste to determine if properly cooked and seasoned.
* Is responsible for maintaining cleanliness of kitchen equipment, and follows all departments of health regulations.
* Maintain weekly inventory of food assuring that sufficient supplies are on hand to meet state and federal regulations. Monitor, maintain and rotate emergency supply.
* Make menu adjustments as needed according to food costs, season availability, resident request, with final approval of the RD.
* Maintain resident diet card/cardex in order and current. Check diets in cardex to physician order at least monthly. Check trays to ensure diets are served as ordered.
* Visit residents to determine food acceptance and preferences.
* Be responsible for the ordering of food and supplies, checking delivery, supervising storage, signing invoices, and keeping record of food costs ensuring that all food and supplies are on hand at the time needed.
* Complete Nutritional Screening form on new residents, MDS and charts on all residents quarterly.
* Stay current on Serv Safe.
* Review, update and follow policies and procedures.
* Attend weight variance meetings, IDT meetings and stand up meetings as requested.
* Performs other duties as required.
