Barrio Brewing Co. was established in 1991 in Tucson, AZ and was the first full mash brewery started under the name Gentle Ben's Brewing Company. Fifteen years later, Barrio expanded to a new location so it could continue to brew to meet the demand for their award-winning beers. Now, it is the third largest independent brewery in the state. In 2020, the founders Dennis & Tauna Arnold, sold Barrio Brewing to their employees to become the first Arizona brewery to be 100% Employee-Owned.


After 32 years, Barrio continues to grow and is constantly innovating to meeting the ever-changing desires of Arizona beer drinkers. Job Description:

The Sous Chef is responsible for planning and directing food preparation in the kitchen. As assistant to the Kitchen Manager, the Sous Chef will help with menu planning, inventory and managing of supplies. The Sous Chef will also make sure the kitchen is up to safety standards and that staff are following sanitation policies. It is important that the Sous Chef be quick on his/her feet and be able to make smart decisions instantly. The Sous Chef will assist with staff scheduling and constructive discipline, as necessary.






Qualifications

• Must have 2 or more years of kitchen experience in a full service, moderate to high volume restaurant.

• ServSafe Certification (ServSafe Manager Certification) preferred.

• Strong communication skills.

• Strong leadership skills.

• Exemplary presentation of self by maintaining personal hygiene and professional etiquette.

• Culinary school background is preferred.

• Able to work ten hour-plus shifts; also able to stand, sit or walk for extended periods of time.

• Required to grasp, lift and/or carry up to 50 lbs. as needed.

Key Duties & Responsibilities

People:

  • Assists in maintaining proper staffing levels by recruiting, interviewing and hiring talented kitchen staff members following the established process.
  • Assists in managing assigned staff, including scheduling, regular performance reviews and corrective action plans set by Barrio Brewing Co. policy and procedures.
  • Is responsible to assist with ongoing training and professional development of back of house staff.
  • Effectively communicates with management to ensure efficient operations are met daily.
  • Effectively builds trust with all staff members and fellow management by providing clear, concise and honest communication and feedback.
  • Evaluates the quality, care and morale of the staff and strives to improve through solid communication, fairness in scheduling, work group leadership, etc.

Quality Profits:

  • Is responsible for achieving success in the written budget to include: food cost, food efficiencies, labor cost and direct kitchen expenses.
  • Assists in setting operational goals, strategic planning and timely reviews of the kitchen staff.
  • Directs and holds staff accountable for their individual goals to ensure success.
  • Assists in the implementation and maintenance of all kitchen systems.
  • Maintains current schedules, personnel files, efficient ordering and production targets, etc.
  • Maintains compliance with inventory procedures.

Operational Excellence:

  • Maintains food quality standards for the restaurant.
  • Oversees all phases of food procurement, production and service, to include: inventory and ordering, storage and rotation, food preparation, recipe adherence, plate presentation and service and production time standards.
  • Conducts daily line checks, food reviews and recipes of the day. Provides clear feedback to the entire team, including front of house staff and management.
  • Monitors an established commitment to service and follows corrective action plans if needed.
  • Responsible for managing on-going repairs, maintenance, programs, etc.
  • Conducts monthly housekeeping, food safety, sanitation, and facility reviews personally to improve restaurant standards in the kitchen and to correct deficiencies on a timely basis.
  • Responsible for the cleanliness of the kitchen by maintaining specified standards and training staff on proper sanitation.
  • Assures that staff avoid cross contamination, improper food handling and/or storage practices, etc., through continuous training and supervision.

Job specification

Full-time position, competitive wages that will be determined by experience and other factors. Position is eligible to participate in Employee Stock Ownership & 401k Plans (after 1 year), Medical, Dental and Vision coverage.
