Position Summary:
The Senior Ingredient & Analytical Research Associate conducts research and product development activities throughout Bimbo Bakeries USA. Brings key skills and knowledge to the Baking Business in new product ideas/concepts and troubleshooting through hands-on testing and/or direction. Spearheads new technology development and its application into all baked good areas. Develops and implements productivity projects. Coordinates internal lab testing of ingredients/finished products, shelf-life studies, 60/40 testing, writing/revising ingredient specifications, and laboratory/department SOPs. Maintains all lab equipment, manages lab equipment and supply orders, and process orders invoices for payment of laboratory supply and third-party claims testing. Authors technical reports on shelf-life and 60/40 studies, draws conclusions from data and results, and presents finding to necessary stakeholders.
Key Job Responsibilities:
* Contribute to key product improvement, cost reductions, new products, development, knowledge building or other technically based, business driven objective. To lead in special projects concerning products, processes, equipment, and facility concepts and design.
* Design and execute experimentation using established procedures, standard techniques, and equipment. Be able to set up a basic baking laboratory where required, select the equipment, and manage the project.
* To work both in a "hands-on" environment and /or direct as needed to develop ideas and concepts into product reality. Evaluate new ingredients, materials, products, or processes. Assist in setting quality standards and ensure that ingredients and finished products are maintained at such standards. Contribute as a member of Taskforce teams to convert to new and improved formulas.
* To write the reports/memo on current status of developments. Record data from analyses or experiments in a computer, logbook, or laboratory notebook. To maintain a daily log outlining project status and activities in such detail that others may continue the test. Keep records of all tests that have been carried out.
* Interpret results and translate results into possible solutions. Describe/demonstrate research results or experimental protocols to colleagues in a professional manner. Organize corporate and internal shelf-life studies and develop final technical reports on results to align teams.
* Develop templates for final reporting of 60/40 studies and coordinates internal sensory testing to prepare technical reports to measure quality, quantity, and composition.
* Carry out those programs so laid out by designated supervisors under authority of the Director of Ingredient & Analytical Research North America, within the parameters of time and cost, etc. Provide guidance on shelf-life extension of ingredients, calculate nutritional values for ingredients, and perform other key tasks for Director of Ingredient & Analytical Research North America during business travel/vacation.
* Utilize practical and technical abilities both of his/her own and/or other team members, make changes, samples adoptions as required. Utilize services available - laboratory, accounting, packaging, technical services, marketing, engineering, etc. - to ensure that product(s) are followed through to channels for final approval for sale.
* To ensure, at all times, communication with all R&D members of product development team throughout Bimbo Bakeries USA and any other groups related to the projects. To advise and guide, as requested, other R&D team members and other departments throughout Bimbo Bakeries USA, on scientific/technical matters as necessary. Prepare monthly departmental status reports to aligns teams and management on productivity. Coordinate R&D teams on a package retrieval system.
* Develop a key quarterly stakeholder meeting to align Procurement and R&D teams on new products, expected volumes, and ingredient supply chain issues and solutions.
* Lead for BBU specifications, system updates, and process operating guides for product developments. Ensure flow of documentation is communicated to those who have a need to know.
* Deal effectively and professionally with outside ingredient suppliers to meet R&D objectives (keeping Purchasing informed).
* Validate BBU and Bimbo Canada ingredient categories, physical states, allergens, and ingredient analytical parameters for launch of OCloud and Passport Optiva. Assist Passport team in obtaining the necessary ingredient specifications to expand Passport Pilot products. Attend Passport Trainings to launch the new system.
* Provide guidance to Canadian R&D team on methodology and equipment used for internal analytical testing of finished products. Lead contact for Canadian R&D team on developing 60/40 technical reports.
* Sample and identify, if any, bacterial, fungal, or non-desirable excess material in BBU bakeries to ensure corrective actions are taken and signed off. Sample and coordinate testing of swabs from bactericidal and fungicidal treatments and develop technical reports to measure effectiveness.
* Lead for Missing and Out of Specification COA notifications from Quality and Food Safety to determine root cause and provide solutions.
* Coordinate and participate in external and internal quality audits to represent R&D. Participate as a member of the Quality Council.
* Train newly hired associates/co-ops on job responsibilities including analytical testing and specification maintenance. Supervises Analytical Associate I.
* Where approved, travel to all Bimbo Bakeries USA technical facilities and to co-packers facilities, to accomplish R&D objectives independently and effectively, and interface professionally with representatives of the same.

Education and Work History:
B.S. degree in Food Sciences, Cereal Science, or in Chemical, or Food/Agricultural/Biological Engineering required. A combination of education, training and experience that results in demonstrated competency to perform the work may be substituted.
* Strong commitment to and support of BBU's values, ethics, goals, and objectives.
* 5 years of experience in Research and Development of foods, preferably in the bakery industry. Formulating and/or troubleshooting experience is desired.
* Knowledge of the baking process and the function of ingredients preferred.
* Expert knowledge of the baking process and the function of ingredients.
* Proven excellent work record with demonstrated high levels of initiative and self-direction.
* Demonstrated strong problem-solving and critical-thinking skills.
* Excellent organizational and communication (written and oral) skills.
* Excellent project management skills with ability to prioritize multiple activities simultaneously
* Computer skills and proficiency with word processing, spreadsheet, database, and other software/applications.
* Willing to travel as required.
