What are the responsibilities and job description for the Food Service Supervisor position at Boys Town?

MAJOR RESPONSIBILITIES & DUTIES:- Supervises food production services and kitchen staff ensuring food quality, sanitation, and safety standards are maintained at a high level.
- Establishes work assignments, communicates production deadlines, and sets time parameters.
- Supervises kitchen and dining facilities including overall utility, production, distribution, and care of kitchen and dining facilities.
- Plans and forecasts portions to estimate quantities of ingredients, inventory, and ordering; coordinates purchasing and bidding for food inventories to maintain appropriate level and quality of inventories.
- Oversees food production services, plans menus for regular meals and special functions, and ensures quality of final food products.
- Coordinates the solicitation, receipt, and distribution of donations; monitors and proceeds with any meal ticket tasks.
- Tracks and monitors the recording of production records for forecasting and budgeting purposes.
- Hires, supervises, trains, and evaluates assigned personnel; schedules and oversees the work of staff.
- Ensures proper functioning, safety, and sanitation of facilities and equipment meets HACCP (Hazard Analysis Critical Control Point) and Joint Commission regulations.
- Ensures staff are following the established USDA menus and requirements for Residential Treatment Center (RTC) youth and Inpatient Psychiatric Unit (IPU) patients.
- Ensures meals are prepared to meet the special dietary requirements for Hospital patient meals.
- Knowledge of Federal Sanitation regulations concerning facilities, equipment, and utensils.
- Knowledge of USDA school meal requirements.
- Creative skills to incorporate new menu ideas and newer food service trends.
- Ability to perform mathematical calculations to determine percentages and fractions for recipes.
- Knowledge of operation and maintenance of dish machine, ovens, steamers, slicers, freezers, and refrigeration.
- High level of professionalism and interpersonal skills.
- Basic computer skills in Microsoft Office.
- Ability to communicate in an articulate, professional manner and to build and sustain successful, professional relationships.
- Ability to successfully lead a team of associates.
- High school diploma or equivalent required.
- Minimum of 3 years of previous experience in food preparation and serving required.
- Previous supervisory experience in industrial food preparation required.
- Provide own transportation (mileage reimbursed) to complete travel requirements of the job required.
- On-call (continuously or rotationally) to provide support required.
- Available to work some after hours (morning, evening, night), weekends, and holidays as assigned required.
- ServSafe Food Handlers certification within 120 days of transfer or hire required.
- Minimum 18 years of age required.
- Post-secondary education preferred.
- Previous experience in food preparation and serving in a hospital setting preferred.
