ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
- Plans and coordinates standards and procedures of food storage, preparation, and service; equipment and department sanitation; and employee/client safety.
- Responsible for cleaning of work area and sanitizing of work surfaces, mopping of floors, taking out trash, and completion of other assigned chores.
- Confers with Dietary Supervisor to ensure that menus and department policies conform to nutritional standards, government regulations, and internal procedures.
- Reviews individual client's special diet information/needs with Primary Counselor. Provides nutritious meals that meet the client's medical/physical needs. (This does not include personal preferences.)
- Inspects food, food preparation and storage areas. Ensures that hairnets and gloves are worn by food preparers in both the preparation and serving of the food.
- Completes weekly department checks, ensuring cleanliness of facility and reports any needed repairs or replacements.
- Is familiar with company policies and procedures, including safety standards and fire/disaster plans.
- Demonstrates the ability to lift 25 pounds and/or to assess the lift load in order to request assistance.
- Supervises the evaluating of leftovers and plans for use; labels, dates and stores leftovers properly.
- Carries out Master Menu Plan, adjusting for nutritionally equivalent substitutes, outside donations, leftovers, and emergencies, records menu changes.
- Plans cooking schedules to have food prepared on time, in order to serve hot.
- Monitors food for correct temperature prior to serving.
- The employee understands and practices Universal Precautions at all times.
QUALIFICATIONS
- Pass a Background Screening and Drug Test, required
- Keeps a current CPR and First Aid certifications
- Valid TN D.L. with "F" endorsement required; "F" endorsement can be obtained once hired.
EDUCATION and/or EXPERIENCE
- High School Diploma or GED required
- Higher Learning Degree preferred but not required
- One to two years related experience and/or training; or equivalent combination of education and experience
