Dietary Aide
Prepare meals per menu and alternate menu for all diet types and textures while following all sanitation and preparation regulations regarding the safe and sanitary handling of food and proper food storage, labeling, etc. Responsible for performing a variety of tasks in the preparation, service, and clean up for meals served to residents in the nursing center. Maintains an attractive and sanitary dining room, meal service and delivery.
Experience Required: Experience as a cook in a Skilled Nursing setting preferred.
Essential Functions:
- Read menu to determine the preparation needed for the meal(s) for the day.
- Locate the recipe for each item on the menu and gather all ingredients and tools needed for meal preparation. Prepare the food items that require the longest cooking time or preparation time first. This includes any alternate food items that will be offered.
- Upon completion of food preparation and at appropriate time, prepare for tray service as follows:
A. Place food for Dining Room 5 in steam table pans and place in holding ovens.
B. Place all hot food on steam table
C. Gather all utensils needed for serving, make certain that the utensils are the proper utensils for each food to be served. Place all the utensils on the counter next to the steam table.
- Just before tray service begins, take temperatures on all hot foods on the steam table and record the temperatures.
- Serve trays on the tray line, paying close attention to the Diet Cards and observe for food preferences. Make certain that all food preferences are observed, and alternate foods are placed on trays that require alternates due to food preferences, allergies, etc.
- Upon completion of breakfast tray line for SNF, take the Residential breakfast food to the Residential Dining Room.
- Cook assigned to Residential for lunch and dinner meal must take all hot and cold foods to the Residential dining room and serve the meals
- Clean steam tables after the meals have been served. Hot foods must be cooled down according to cool down policy before being refrigerated. Label and date all left over foods and place in refrigerator, freezer, or other appropriate area of storage.
- Clean your area (per posted cleaning schedule). Use appropriate sanitizer and other cleaning utensils/supplies and appropriate cleaning techniques.
- Read menu for following days to see if anything needs to be prepared in advance and to check for meats, poultry, etc that may need to be placed in refrigerator for thawing. Use proper thawing techniques for all meats and poultry. (Meats and poultry must be placed on bottom shelf of refrigerator in a container to prevent leakage onto other food items)

- Prepares and labels nourishments according to center procedures.
- Prepares and portions desserts, salads and other non-entre foods into dishes; pours beverages.
- Follows production sheets and pre-preparation sheets or guidelines when appropriate.
- Completes pre-preparation as needed or assigned including washing, peeling, and cutting vegetables and fruits to prepare for use; Slice’s meat and measures or weighs for menu compliance and nutrition accuracy.
- Follows the cleaning schedule; Cleans the equipment and work area after each use; Sweeps and mops kitchen floors as assigned; Takes trash to dumpster as assigned; Washes pots and pans as assigned.
- Assumes responsibility for meeting meal schedules.
- Washes dishes and silverware according to dishwashing procedure; Puts clean dishes and silverware away; Assists with cleaning of equipment, dishes, silverware, and kitchen as assigned.
- Assists in preparation of food items and tray lines; Works on meal tray serving line. Sets-up before start of meal service. Breaks down area and cleans-up at end of serving line.
Pay: $20.00 - $22.00 per hour
