CATCH LA is seeking an experienced CHEF DE CUISINE to join our team

 

CATCH LA is a globally influenced seafood-restaurant set in the West Hollywood design
district. With its signature, open kitchen and breathtaking views of downtown Los Angeles & the Hollywood Hills, the 340 seats retractable rooftop haven invites the outside in as it blends great seafood with sushi and Asian influences and streaming, shareable style of service with a unique, open-air dining room and elevated, interactive atmosphere. With a focus on the food CATCH LA keeps it fresh, incorporating local and sustainable ingredients wherever possible as it cultivates a menu mix of Catch classics like the Catch Roll, Truffle Sashimi, Wagyu on a Rock and Cantonese Lobster with inspired renditions of Vegan and Gluten-Free additions.

Requirements:

 

Maintain food cost of all culinary operations to company standards.
Maintain labor cost of all culinary operations to company standards.
Daily Communication of concerns, issues and ideas with General Manager and Director of
Operations.
Set & maintain labor par levels with General Manager.
Interview cooks and chefs recommended by Executive Sous Chefs.
Establish training schedule for new cooks and Chefs.
Hire and fire all cooks if Executive Chef is not present daily.
Continually coach, train and mentor all cooks and Sous Chefs.
Perform biannual employee evaluations of Sous Chefs.
Inspire and set positive tone in the kitchen.
Communicate with Corporate Purchaser on daily quality of products.
Ensure menu items maintain appropriate food cost to Company Standards.
Recommend new products and ideas to keep chefs inspired.
Responsible for maintaining a city Department of Health ‘A’ Level Facility.
Responsible for maintaining an up to date Food Handlers Permit.
Create and execute daily specials.
Work with Executive Chef on menu development.
Validate and spot check inventory to maintain accuracy.
Uphold all human resources best practices as it pertains to coaching, counseling, disciplinary, hiring,
and terminations.

Follow and ensures compliance of all CHG policies and standard operating procedures as
outlined in the Employee Handbook.

Act as an ambassador to CHG Culture.

 

  • Bilingual English/Spanish is a plus.
